🥑🥥 Coconut Chia Pudding – A Nourishing Breakfast 🌿
Gluten-free | Dairy-free | Sugar-free | Wheat-free

Ingredients:
✅ 3 tbsp chia seeds
✅ 1 cup coconut milk (or almond milk)
✅ 1/2 tsp vanilla extract
✅ 1/2 tsp cinnamon
✅ 1 tbsp shredded coconut
✅ 1/4 cup fresh berries (blueberries, raspberries, or strawberries)
✅ 1 tsp h**p seeds or chopped nuts (optional)

Instructions:
1️⃣ In a jar or bowl, mix chia seeds, coconut milk, vanilla extract, and cinnamon.
2️⃣ Stir well, then let it sit for 5 minutes. Stir again to prevent clumping.
3️⃣ Cover and refrigerate overnight (or for at least 2 hours).
4️⃣ Before serving, top with shredded coconut, fresh berries, and h**p seeds or nuts.
5️⃣ Enjoy a creamy, nourishing breakfast!

Here's some Monday Food Inspo to start your week: Chicken & Quinoa Salad 🥗

🌿 Cook the quinoa: Rinse quinoa under cold water, then cook it according to package instructions (typically 1 part quinoa to 2 parts water). Once cooked, set aside to cool.
🌿 Prepare the chicken: Season chicken breasts with salt, pepper, and your choice of spices (garlic powder, paprika, etc.), then cook in a pan or bake. Once cooked, shred the chicken using two forks.
🌿 Make the dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until combined.
🌿 Assemble the salad: In a large bowl, combine cooked quinoa, shredded chicken, leafy greens, cucumber, red bell pepper, red onion, feta cheese, and parsley. Toss to combine.
