Homegrown 🐥 🐔


Never thought I would butcher a chicken in my life (To be honest, I’m still surprised I did!). But I do think it’s a very big deal to be aware where (our) food comes from/ what we put in our mouth. And especially to not be ignorant to the fact that food doesn’t just magically appears in the shops.

Well, I can say these chickens have been raised with a lot of love and have been given the best quality food available. And now… now they serve the purpose of feeding our family.

What‘s the number 1 nutrition advice I would give people?
➡️ Start growing your own food!

OR if that is not an option for you (yet); connect with people around you who are growing their own organic food!

Get a taste again of how food is supposed to taste. Rediscover REAL flavours instead of artificial flavours. You’ll be amazed by it. It will start to make you wonder what you have been eating for so long.

And as you put the hard work in growing your own food (or you connect with people who show you the work they put in to it) you will start to feel so much more respect for food again. You will treat it as something precious.

Standing in your kitchen making a meal with fresh picked food will leave you with an Amazingly proud and satisfied feeling🙏.

It’s almost crazy to think that not a single hour in my nutrition and dietetics degree was spend on understanding where food is coming from and how to grow it. As there is where your relation with food should start. Not in a supermarket full of packaged processed food. 🤷‍♀️

Pumpkin Quich! 👩‍🍳

Wasn’t sure how this one was going to turn out as I made use of a gluten free flour (brown rice flour) for the pastry. But hey, didn’t turn out to bad! 👀👌

I used the recipe from Jamie Oliver for this one:

Pastry:
500g brown rice flour
250g butter
8 tbsp cold water

Filling:
800g pumpkin
1 onion
3 garlic gloves
Olive oil
100g cream
100g cheddar
6 eggs

Well, I guess it’s fair to say that working with sourdough is pretty addictive 😍.

Second attempt on making a Khorasan (Kamut) sourdough bread 🍞… and ooh ya, it was good! 🤤

It’s a 100% Khorasan one.
🔹450g Khorasan
🔹100g Khorasan Starter
🔹350g water
🔹9g salt

Next up will be using our pumpkins from to garden to make a pumpkin soup to go with it OR to make a pumpkin quiche!

A growing belly and a first try to make a Khorasan sourdough bread.🤰🍞

My belly is currently ‘rising’ faster then my dough but I’m a few weeks ahead of my sourdough starter… so let’s give the sourdough starter some time to catch up with me 🙃

PRESERVING

Our garden has been spoiling us with A LOT of tomatoes 🍅! Like… really… a lot! So time to wrap my head around some of the preserving methods! 🤓

👆For this batch I decided to preserve them in olive oil. I also added some garlic, salt, rosemary & bay leaves to it.

Choose to give this one a try as it seems (we’ll have to see how it tastes) a very easy way to preserve a lot of tomatoes. Not a lot of work and easy to do while keeping an eye on your baby :)

I used the recipe from blog at her “The Elliott homestead” site.

👩‍🍳 First time trying to make a pumpkin pie! 🥧

Used the pumpkin we used as our wedding decoration a week ago so it made it extra special 👌

Based my recipe on the pumpkin pie recipe from the nourishing traditions’ cookbook. (Well, I changed quite a lot but still :))

Ingredients
____________
Pie crust:
▪️butter
▪️Khorasan flour
▪️tiny bit coconut palm sugar
▪️sea salt
▪️egg yolks

Pie filling:
▪️pumpkin purée
▪️eggs
▪️coconut palm sugar
▪️grated ginger
▪️cinnamon
▪️sea salt
▪️powdered cloves
▪️nutmeg
▪️grated rind of lemon
▪️heavy cream

👩‍🍳 Served it with some raw cream and homemade vanilla ice cream! 🤤

📝 Afterwards I realised I should have baked the crust first on its own before putting it all together in the oven. But still, not bad for a first try!
