AVOCADO SALSA Serves 4

2 avocados diced
1 large spring onion
1 tsp seeded mustard
juice and zest of one lemon or lime
1 clove of garlic crushed (or use minced)
1 tsp flaxseed or olive oil

Combine the mustard, juice, zest, garlic and oil in a jar or bowl. Shake or whisk well.
Combine the avocado and chopped onion in a serving bowl.
Pour the dressing over the top and mix lightly.

Serve on top of chicken or fish for a delicious serve of healthy fats

Do you know how easy it is to roast all your veggies?

Preparing your veggies this way is super simple to do and is an easy way to set yourself up for success! Put your favorite veggies on a tray lined with baking paper.
Drizzle extra virgin olive oil or coconut oil and sprinkle with salt and pepper and any of your favourite herbs (optional).

Roast at 200 degrees for 10-15 minutes. Turn if pieces are larger and pop back in for another 10 mins

These are great all by themselves, and also to use in other recipes!

I love red capsicum, cauliflower and broccoli!
