Look at this massive pellicle!
Commonly referred to as the SCOBY, it is actually a byproduct of the fermentation and NOT the scoby (Symbiotic culture of bacteria and yeast).
The bacteria make these layers of cellulose so that the yeast stop reproducing and go into the phase where they eat sugars and create alcohol instead.
This bad boy was from our kombucha shatter vessel.

The winner of the first battle in the cold brew wars is “The Little Marrionette”. For cold brew coffee that actually tastes like coffee, with subtle berry fruit flavours and no bitterness.
