I'm addicted to these miso mushroom cups! I came up with idea a couple of weeks ago and they are just Divine and super easy to make! They'll definitely be going in my recipe book! If you end up making it, please tag me and share a photo 😁
This is such a great recipe for a light but super nutritious meal, a great idea for work lunches too.
Here's the recipe:
Ingredients:
2 or 3 cups of mushies of your choice, chopped up
4 or 5 good size cloves of minced/grated garlic
1 decent sized k**b of grated ginger
1 TBS tamari
1 TBS toasted sesame oil
2 tsp coconut sugar or raw honey
1 TBS good quality miso from healthfood store
1/4 cup bone or veggie broth
1 lime cut into wedges
Grated carrot
Chilli (optional)
Chopped shallots
Sliced cucumber
Sesame seeds
Brown, basmati, or quinoa soaked, washed and cooked (I don't react to these, my bod loves rice, especially if I soak and wash it. They do this in the Ayurvedic lifestyle, it doesn't leave you feeling bloated or heavy).
Iceberg leaves separated
Method:
Marinate the mushies in the garlic, sesame oil, ginger, honey, tamari, miso and broth for aprox 15 minutes, giving it a good mix every now and then.
In a pan, heat up some coconut oil or ghee then add the mushie mixture and simmer, whilst stirring for about 10 mins. Let the sauce reduce.
When your mushies are ready, serve up in the lettuce cups with the rest of the ingredients, leaving the sesame seeds and shallots as a garnish. Lastly, squeeze fresh lime over the cups.
