Bacon & Egg Bouquets

Ingredients

- 16 Pieces Turkey Bacon
- 1 ½ Cups Egg Whites (I used the whites from 10 Eggs)
- ½ Roma tomato- Diced
- ½ Avocado- Diced
- Goat Cheese
- Salt & Pepper to taste
- Fresh Basil

Preparation
Pre-

Heat oven to 350F.

Cook bacon on oiled/cooking sprayed griddle over medium-high heat. Do NOT cook fully just a minute or two on each side. Just enough to cook but not crisp.

Remove bacon from griddle and set aside.

Spray mini muffin cups with oil/cooking spray.

Line the muffin cups with one piece of bacon each; wrapping it around completely.

In a small bowl (preferably one with a pour spout) whisk the egg whites and stir in tomato and avocado. (Or any other filler ingredients you choose)

Slowly pour egg mix into each bacon bouquet.

Top with Goat cheese crumbles.

Bake for 15 minutes or until all egg bouquets have set.

Remove and let cool slightly and plate them up.

Top with fresh basil.

Enjoy!!!

Ham and Swiss Panini With Mushrooms and Kale

Ingredients

- 4 slices sprouted wheat bread
- 2 slices low fat swiss cheese
- 4 ounces mushroom, sliced
- 4 cups kale, chopped
- 1 tablespoon thyme, minced
- 2 teaspoons Dijon mustard

Preparation
Heat a large skillet over medium heat and spray with cooking spray.

Add mushrooms and cook 3 5 minutes until tender.

Add kale and thyme and cook another 2 3 minutes to lightly wilt kale. Season with salt and pepper to taste.

Spread 1 teaspoon Dijon mustard over one slice of bread.

Layer ham and Swiss cheese, then half the mushroom and kale mixture. This will pile on, but thats what you want.

Top sandwich with another slice of bread and lightly spray with olive oil cooking spray.

Place the slide with cooking spray down on a panini grill, then lightly spray the other side of the bread with cooking spray.

Grill 4 5 minutes until cheese melts and bread is toasty brown.

Repeat with remaining ingredients.

Baked Eggs With Asparagus and Sun Dried Tomatoes

Ingredients

- 2 large eggs
- 2 large egg whites
- 2 tablespoons sun dried tomato, finely chopped
- 2 tablespoons onion , finely chopped
- 1 teaspoon thyme, minced
- 1/2 cup quark (a creamy cheese that can be found in your grocery dairy section)
- 2 tablespoons parmesan cheese , shredded
- 8 smalls spinach or asparagus

Preparation
Preheat oven to 37

Steam asparagus until tender.

Whip eggs with quark, thyme and salt and pepper to your taste.

Heat non-stick skillet over medium heat and spray with cooking spray.

Saute onion and tomato for 4 minutes until onion is translucent.

Spray small baking dish with cooking spray and add onion and tomato.

Add eggs. Top with spinach or asparagus and parmesan cheese.

Bake for 10 - 15 minutes until egg is set.
