Parmesan & Chive Scones
(Makes 12 - 25min prep, 20min cook)

INGREDIENTS:
3 ½ cups of self-raising flour
1tbsp caster sugar
1tsp salt
1tsp of mixed herbs
2/3 cup grated tasty cheese
60g butter, chopped
1 1 ½ cups milk
2tbsp finely chopped fresh chives
Extra milk to brush
Butter or chutney for serving

METHOD
1. Preheat the oven to 220°C (200°C fan-forced). Grease and flour an 18cm x 28cm slice pan.
2. In a large bowl, combine self-raising flour, caster sugar, salt, and mixed herbs. Add the chopped butter and rub it into the flour mixture until it resembles breadcrumbs.
3. Stir through the grated cheese and chives. Gradually add the milk, mixing until a soft dough forms.
4. Turn the dough onto a lightly floured surface. Gently knead and press it into a 3cm-thick round. Dip a 6cm round cutter into flour and cut out scones. Gather the leftover dough, press it together, and repeat until you have 12 scones.
5. Place the scones in the prepared pan, just touching. Brush the tops with extra milk and sprinkle with any remaining cheese.
6. Bake for 15–20 minutes, or until golden and hollow when tapped.

✨ Serve with butter or chutney and a hot cuppa

We love a good life hack, so here are a few of our favourites from the JJ Care team to help make everyday life just a little bit easier.

👉Cook in Batches: Cooking dinner? Why not double the volume and freeze half (or more) to save yourself a night or two of cooking in the future. The future you will thank you.

👉Use reminders for everything: Set alarms for appointments, medications, or care routines so nothing slips through the cracks and so you don’t have to keep it front of mind all day.

👉One-minute rule: If a small task takes less than a minute, do it immediately; it prevents little jobs from piling up.

👉Double up: Combine chores with a bit of self-care, listen to music or a podcast while folding laundry or tidying up. (warning: You’ll end up looking for more chores to do if it’s a particularly good podcast. 😂)

👉Visual cues: Sticky notes or labelled areas help everyone stay organised and routines run smoothly.

👉Take micro-breaks: Even a few minutes to stretch, breathe, or enjoy a cup of tea can seriously recharge your energy.

Rustic Pumpkin & Sage Risotto

A warm, comforting autumn recipe with big flavour and soft texture, perfect for carers and those needing easy‑to‑eat meals.

INGREDIENTS:

1 cup Arborio rice
1 tbsp butter + 1 tsp olive oil
1 small onion, finely chopped
1 clove garlic, minced
2 cups diced pumpkin
4 cups low‑salt stock (vegetable or chicken)
½ cup dry white wine (optional)
1–2 tbsp fresh sage, chopped
½ cup grated parmesan
Black pepper to taste

METHOD:

1. Warm stock in a pot and keep simmering.
2. In another pan, melt butter with olive oil and sauté onion & garlic until soft.
3. Add rice and cook 1–2 mins until glossy.
4. (Optional) Pour in wine and let it absorb.
5. Add pumpkin and a ladle of stock, stir until absorbed.
6. Continue adding stock a ladle at a time, stirring slowly until rice is creamy and tender.
7. Stir in sage, parmesan, and pepper. Serve warm.

✨ Add a final drizzle of olive oil and top with sage leaves (or another herb from the garden) to make this feel special without fuss.
