Feeding teenagers is a weird ride. They eat at weird times, sometimes they eat a lot, sometimes they forget to eat 🤪 . They won’t eat breakfast, but want a 6pm dinner then a 9pm dinner. Lunch is either all gone or barely touched. But, rather than give up, or force feed, I choose to have heaps of relatively good options there in a pinch. An after school snack, 2nd dinner, pre training fuel…..I try and have a roast chook broken down ready for rolls/wraps, rice or pastas, boiled eggs, yoghurt. Another hack I’ve found is that if fruit it cut up into bite sized pieces, in ready to go containers, they get inhaled, go figure. This week I also made some Mexican chicken and rice wraps, wrapped and ready to either be eaten cold or chucked in the toastie maker, also some egg and cheese sourdough rolls (brekkie or random snack) and I made a batch of granola and Bircher. Should last us a couple of days! Oh and I pre made and froze a curry and felafels for my upcoming (favourite) weekend of the year, womens circle getaway! Amazing what you can pump out I’m in a couple of hours! Thanks for the reminder to use what I already had! No pre supie shop here! 😙

Life has a funny way of giving you exactly what you need when you don’t even know you need it💫 I have followed and admired Felicity and her creations from day dot. She created the beautiful food for my 2019 retreat which I still think about regularly! To now be a part of her beautiful team , whom after only working together for 2 weeks , feel like family, is truly a dream. We get to create, cook up a storm, collaborate, serve and provide meals (made with SO much LOVE) . To be able to merge my clinic brain with my creative, wild, foodie brain is the ultimate balance for me. My consulting days remain unchanged, I’m just elbows deep in giant soup pots for the other 2 days a week! You might also see me serving at events, catering and mingling, which feels so good. IRON Deficiency: why is it SO common and why is it SO hard to rectify?
I have gone down a big research rabbit hole today. Purely because for a simple little mineral, the complexity and nuances around rectifying deficiency are anything but simple! I get many cases of iron deficiency in clinic, children and adults alike, sometimes the approach is easy and straight forward, but lately, I am getting some really resistant cases, which has prompted me to dig deeper into the WHY..... I will save you from the myriad of complex pathways and try to simplify the implicating factors. First, some very interesting findings and facts to start us off..... iron deficiency is most common in women and children. Mainly in children due to their growth and development exceeding what they eat! And in women of menstruating stage, who are experiencing a regular (ish!) cycle, the biggest contributing factor is menstrual blood loss. Not to mention gut absorption factors, which is a whole other rabbit hole of inflammation, leaky gut, parasites and pathogens..... So much to know!!
The REGULATION of iron is largely controlled by an enzyme called hepcidin. Think about hepcidin like the boundcer at the club. Say the club only has capacity for 1000 patrons, once the club hits max capacity, those bouncers ain;t letting anyone else in! Until some leave, numbers dwindle, and we can open up the rope again. Similarly with iron, because iron is toxic in excess, we can only absorb approximately 50-60mg of iron in a 24 hour period..... BUT...... What I am learning more about the complexities of today, is that we only absorb about 10-20% of the iron that we actually ingest.... perhaps less in plant foods compared to animal foods Keeping in mind, the daily requirement for a menstruating woman (AFAB: assigned female at birth) is about 15-18mg daily, knowing that only about 1-3mg of that might be absorbed.....
A 200g beef steak might have 5mg of iron, only .5-1.5mg of that will pass through the gut into the blood stream.... In the case of a period, we lose on average 30-40ml of blood. We store approximately .5mg per 1ml of blood. So, if your period was average heaviness, and you lose 40ml of blood, you re losing 20mg of iron.....per period. With inadequate iron intake, with average menstrual blood loss, if you start the year with ferritn of 50, after 12 months, ferritin will drop to 10! The reference range for ferritin; stored iron: is 30-200, wiht optimal being over 80) However, like many many women battling low iron, they experience heavy bleeding, sometimes as much as 100-150ml per bleed, equating to 50-75mg of elemental iron, in one period!! Not to mention that low iron further weakens blood vessels walls, leading fto further blood loss. It is a classic chicken and egg situation.
In the case of a child, who needs around 8-10mg of elemental iron a day, you really need to think about that requirement being much higher when you take into account what food contains, as absorption is about 1/5 of the level is contains at best. for example, an egg may contain 1mg of iron, but you may only absorb .2mg through the gut inot the blood stream!
Then we factor in other nutrients that influence absorption such as B12, vitamin C Copper, B vitamins, magnesium and vitmain D.
Cracking the code of ongoing low iron or unresponsive to supplementation requires a holistic approach of considering diet, immune function, hormones/menstruation, gut health and stress...... Welcome to my brain!!!

Ok, sooooo apparently not everyone had tinned peas growing up??!! I was chatting with my women’s circle ladies last month about things we had as kids and I said , oh, I loved tinned peas 😂😂 No one else had ever heard of them!!! These were at every bbq and family friend dinner we had as kids! Right next to the tiny taters in butter and chives and the savoys, cubed cheese and cabana 😂😂 I bought a tin today, just to see if they were as good as I remember. Yup, yes they were. What’s your weird kid food you thought was normal/common that apparently not??!! I need to know!!! Any other tinned peas fans out there?!

Is anyone interested in a food dehydrator?

Excalibur, 9 tray food dehydrator. Sold out online. Purchased in Oct 2020 brand new (receipts available) directly from Excalibur. I purchased it to complete my plant based chef training, used for fruit and veg, crackers, dough, yoghurt and cheeses. Excellent quality, comes with original manual. Can be used for so many things!! Food, herbs, flowers, jerky…… pick up in bellbrae or happy to deliver locally or anywhere within 30km (geelong, Bellarine etc) $350 (is $580 new)

Ah the old veggie lasagne, very humbling 😆😁 What you think you can whip up quickly soon turns into a 2 hour session, but oh so worth it! Veggies all pre roasted. Gf lasagne sheets par boiled, tomato sauce made with peeled fresh tomatoes, basil, garlic, sugar S&P, bechamel made with soy milk, gf flour, butter, nutritional yeast, tasty cheese and S&P. Knocked up the trusty chicken soup too

A stitch in time saves 9 as they say! Often we come home from Saturday morning footy with hungry tummies so I did some prep yesterday and last night for a delicious lunch! I’m also trialling some dipping sauces for a rice paper roll feast for women’s circle. Home made hoisin and almond satay from . The hoisin is the BEST sauce I’ve ever tasted 🤤🤤🤤 The satay super toasty, sesame and nutty. Divine!
