This ✨HOMEMADE GRANOLA✨ is the perfect balance of wholesome and indulgent. Rolled oats, toasted pecans, sunflower seeds and pumpkin seeds come together to create rich texture, nutty flavour, and satisfying crunch in every bite.

It’s the kind of pantry staple you’ll reach for daily — sprinkled over yoghurt, served with milk, or enjoyed by the handful straight from the jar. Simple to make and endlessly versatile, this granola feels nourishing, comforting, and just a little bit luxurious.

Serves 6

Ingredients:

2 cups rolled oats
½ cup sunflower seeds
½ cup pumpkin seeds (pepitas)
¾ cup pecans, roughly chopped
⅓ cup honey
¼ cup neutral oil (or melted coconut oil)
1 tsp vanilla extract
½ tsp .au organic true cinnamon
¼–½ tsp salt (to taste)

Optional add ins:
Dried fruit (cranberries, apricots, raisins)
Coconut flakes
Dark chocolate chunks

Method:

Preheat oven to 160°C (fan 140°C). Line a baking tray.
Mix dry: Combine oats, seeds, pecans, cinnamon, and salt in a large bowl.
Warm wet: Gently warm the honey and oil together (microwave or stovetop), then stir in vanilla.
Combine: Pour over dry ingredients and mix well so everything is evenly coated.
Bake: Spread in an even layer. Bake for 20–30 minutes, stirring once halfway for even colour.
Cool completely: Let it cool on the tray without stirring — this helps create crunchy clusters.

Store in an airtight jar for up to 2–3 weeks.

✨MOROCCAN CHICKEN TAGINE✨

A rich, fragrant one-pot tagine layered with warming spices, tender chicken thighs, sweet bursts of cherry tomato and raisins, briny olives and hearty chickpeas — slow simmered in a cast iron pot and finished with fresh parsley.

Serves 4-6

Ingredients

6 chicken thighs
2 tbsp olive oil
1 large red onion, sliced
4 garlic cloves, minced
2 tbsp tomato paste
1½ cups chicken stock
250g cherry tomatoes
1 can chickpeas, drained and rinsed
1/4 cup green olives
1/4 cup dried raisins
2 tsp .au Moroccan Tagine spice blend
1 tsp .au Egyptian Za’atar spice blend
1 tsp .au Organic Thyme
1/4 tsp .au Organic Cumin
1/4 tsp .au Organic Smoked Paprika
1/4 tsp .au Organic True Cinnamon

Optional Additions:
Carrots and potatoes

Method

1. Build the flavour base

Heat olive oil in a large cast iron pot or Dutch oven over medium heat on the stove.

Add red onion and cook until softened and lightly caramelised.

Stir in garlic, tomato paste, Moroccan spice, za’atar, thyme, cumin, smoked paprika and cinnamon. Cook for 1 minute until fragrant.

2. Add the remaining ingredients

Pour in chicken stock and stir well.

Add cherry tomatoes, chickpeas, olives and raisins. If using carrots or potatoes, add them now.

Nestle the raw chicken thighs directly into the sauce and season lightly with salt and pepper.

3. Slow cook

Cover with a lid and simmer gently on low heat for 45–60 minutes, or until the chicken is tender and fully cooked through.

For a richer finish, transfer uncovered to a 170°C oven for the final 20 minutes to slightly reduce the sauce.

4. Finish & serve

Scatter generously with fresh chopped parsley.

Serve over fluffy cous cous or alongside warm Turkish flat breads to soak up the rich spiced sauce.

The flavours deepen even more the next day, making it ideal for leftovers.
