Your cutting board might be seasoning your dinner with plastic.
A 2023 study published in Environmental Science & Technology found a standard plastic cutting board can shed up to 1,114 microplastic particles into your food in a single use — and the older and more scored the board, the worse it gets. A 2025 follow-up went further: mice fed a diet prepped on plastic boards ended up with a damaged gut lining, inflammation, and thrown-off gut bacteria. Plastic breaking down the gut barrier before your food's even had a chance to do its job.
Ditch the plastic board. Wood, glass or bamboo doesn't shed like this, and it'll outlast your knives too. If you're not ready to let plastic go — at minimum, retire the scratched-up one you've had for years. That's the one doing the most damage.
Same rule applies to your containers: glass, not plastic. Every time.
