Out of breath, (even while I’m eating,) stuffed up immediately after eating, (due to eating gluten,) red in the face, tight clothes, (had to get the next size up,) extremely sore feet and knees after work everyday, tired, foggy mind, anxiety, and not wanting to go out. These are some of the things that have happened to me since I went off keto in September. In a short 4 months, I gave gained 5️⃣0️⃣ pounds, but whats really shocking, is I gained 20 of that in 3 weeks because we had homemade cookies around for Christmas week and I couldn’t control myself.

I gained all this weight not because keto doesn’t work, but because I didnt change my eating habits when I was off keto. You will gain back whatever you lose on any diet if you dont change your eating habits. I ate everything in sight, and more.

Today, I’ve started keto, for what I hope is the final time. I was so successful in the past because not only did I see fast results which kept me motivated, but because I controlled what came into the house. If junk wasn’t there, I couldn’t eat it. That is not the case this time, as I’m living with family. This will be my biggest challenge yet - having junk food and fast-food in front of me and not being able to have a bite here, or just cave and eat. So I do have more anxiety going into this than normal, it will be harder this time around. But I know I hate how I feel and I gotta get rid of this weight.

I will post along the way from this page, my success and failures. Thanks for sticking around while I get into the swings of things in this country. 🇺🇸

When you’ve been on keto and haven’t had regular sweets in such a long time, it’s like fireworks are going off when you find something that doesn’t taste like a keto treat. These are delicious! I got this recipe from someone in the keto Facebook group. I normally don’t try the recipes posted there because a lot of them are spam or just really bad. I had cream cheese to use up and some freshly picked strawberries from a local farm, so I thought, why not ?

Other than this being the most delicate cookie you’ll ever make and having to keep them in the fridge, this is one of my new favorite recipes. It reminds you of a strawberry shortcake, it’s delish.

Keto strawberry cream cheese cookies

Ingredients:
1 cup diced strawberries
1 tbsp lemon juice
1 tbsp sweetener
1 ¼ cup almond flour
¼ cup coconut flour
⅛ tsp salt
1 ½ tsp baking powder
¼ cup butter, unsalted, softened
4 oz cream cheese, softened
½ cup sweetener
1 egg
1 ½ tsp vanilla
¼-½ cup white chocolate chips

Directions:
Preheat the oven to 325 degrees F. Grease (or spray) a cookie sheet with parchment paper and set it aside.

In a small bowl, combine strawberries, lemon juice and 1 tbsp of sweetener. Stir to combine and let sit for 10-15 minutes, stirring every so often.

In another small mixing bowl, combine coconut flour, almond flour, salt and baking powder and whisk to combine. Set aside.

In a separate bowl, beat the butter, cream cheese and sweetener until just incorporated (do not overmix). Add in egg and vanilla and beat on low until combined.

Gradually add in the dry ingredients and beat on low until just combined.

Stir in white chocolate and strawberries, (disregard liquid from the berries.) Place cookie batter in the fridge to cool for about 10-15 minutes.

Take heaping tablespoons of the batter and place them on the baking sheet. Flatten slightly with the back of a fork. Place the baking sheet in the oven for 13-15 minutes or until the edges of the cookies just begin to brown.

Once cookies have baked, allow them to cool on baking sheet for about 10 minutes before transferring them to a cooling rack to cool completely.

Store cookies in an airtight container in the fridge for up to 7 days.

*** cook time took a lot longer for me. I forget how long it took but I went by the the colour before I took it out.*** 🍓🍪🍫
