Current fav breakfast ⬇️Congee with egg & nori•soak and rinse rice. Preferably 6-8 hrs with an acid or some baking soda....

Congee with egg & nori
•soak and rinse rice. Preferably 6-8 hrs with an acid or some baking soda.
• cook rice with bone broth.
• add an egg or two to the portion you’re going to eat. Continuously stiring/mixing.
• top with nori, toasted sesame oil and a little tamari.

And easily mix it up with a little miso or umeboshi.

Could also explore a sweet version. The egg really hides the bone broth flavour. Think French toast meets rice pudding.

My daughter prefers the egg on the side so I make a little egg wrap for her and serve the congee plain. She LOVES seaweed but separate. Lots of things separate 🙃

Congee can grow quickly so I like to make a big batch and freeze in portions as rice needs to eaten within 3 days.

1 Bowl Recipe packed with nutrients.

I try to make a batch of something weekly to have a quick meal or snack on hand. Quick finger foods tend to be a hit my household. So here is a quick 1 bowl recipe for a nutrient dense pancake.

To make nutrient dense recipes you need nutrient dense ingredients.
almond flour is just that. Fresh, superfine, and only 3g of net carbs & 4g of protein per serving.

1 lg Banana-mashed
1 tsp cinnamon
2-3 Eggs
3/4 cup Almond Flour
Pinch of sea salt

Mash banana into a smooth paste.
Whisk in the eggs- gently.
Add the remaining ingredients and mix until well combined. You are looking for a thick and creamy texture.

Heat frying pan with butter or coconut oil. Scope and pour batter. Spread into shape.
Fry, flip and serve. Eat as is or add some toppings.

Makes about four to six 3-4" pancakes.
