I'm not usually a big fan of canned tuna, and I'm not really sure how these cute little cans ended up in my grocery cart, but here we are lol. I used to make tuna melts, which was probably the intention when I bought the tuna, but without the cheese, and the hard boiled egg, and traditional mayonnaise, they've somehow lost their appeal.

But I felt like fish today, so I decided to make a tuna salad to go on my seedy crackers for lunch. I mixed the tuna with some chopped veggies, a bunch of chopped cilantro, an avocado, soy free vegenaise and some other random weird but delicious sauce, and ended up with this grown-up little dish of tuna salad. And, now that I've written it down , I'll be able to repeat it another day 😁

When I decided to make a lettuce wrap for lunch today, I honestly thought I would miss the cheese that I would usually use.

But after it was assembled and eaten, I found I didn't miss it at all with all the flavor packed ingredients that I crammed inside. I used a nice little piece of leftover baked trout, some soy free vegan mayonnaise, (so far the only option I have found without eggs), a good dollop of homemade guacamole, and a smear of some cashew cream cheese, along with really thinly sliced peppers and cucumbers. Overall pretty happy with the results!

Lettuce wraps are so versatile, and I think if you get a variety of textures in there (of course with something messy that will drip out all over your hands and your plate while you eat the last few bites😂) you really can't go wrong 😁

Okay friends, it feels like time for a change.

You may have noticed the name change up above, and I feel I should explain. Complete transparency... this post is long, so please bear with me!

Food has always been a big thing for me, and if you know me, you'll know that I have gone through a lot of different ways of eating through the years, all in the pursuit of optimal health and wellness. But...I also happen to love food, like.... A lot!

Eons ago, we were vegan, and then vegetarian for a time too. I have dabbled with gluten-free, low fodmap, keto and low carb too. Not because they were trendy, but to try and heal my gut AND still enjoy good food at the same time. In what seems like another lifetime ago, I even taught some pretty amazing cooking classes! Food allergies/intolerances also run rampant in my family, making family gatherings challenging! Through all of this, I have become fluent with substituting so many ingredients, I almost feel like a kitchen scientist 😁

My recent food allergen blood tests threw me for a complete loop though. Having to remove dairy and eggs, on the advice of my naturopath, which were such a HUGE part of my diet literally boggled my brain. What the heck do I eat now? Throw in an aging creaky body that is 5 years into a post-concussion chronic pain journey, a persistent rash AND full-blown menopause, the struggle is real.

With my last few posts, my low carb kitchen name isn't sitting right. I don't want to be disingenuous or misleading. I am still very much trying to keep things lower carb, but I really don't know what that looks like anymore. So we're back to the proverbial grindstone.

If you have stayed with me this far, Yay! But I understand if my page doesn't suit your needs anymore, that is completely Fair.

I feel like my posts are now going to be more about the trials and tribulations of trying to eat allergen friendly food, and we will just take it from there. We will figure this out, one bite of (hopefully 🙀) delicious food at a time!

Generally I drink my coffee black, but every once in a while, I love the comforting decadence of a latte. I was pretty sad when I thought I would be latte-less after removing dairy😕.

My ND recommended I try this oat milk, so this morning, I frothed myself up a lovely latte with a caramello .ca pod and I was pretty darn impressed! The froth was lovely and creamy, and complimented the caramel flavor of the Nespresso pod perfectly☕❤️

Now, please know that Oatmilk is definitely not on the low carb spectrum, with 18 g of carbs and 6 g of sugar per 1 cup. With approximately 1/3 cup in my latte, it's still definitely a treat, not a daily thing, but I'm pretty happy with finding some decent dairy free alternatives!
It's also not bad in my tea, which was a pleasant surprise!

Well, damn. Has anyone else in my group done a deep dive into food intolerances? I just got my results back, as I've been dealing with some very irritating skin issues, and as always gut issues off and on. These are my results, and in the grand scheme of food, I guess I should be pretty pleased because the green foods massively outweigh the yellow and red ones (there is another page and a half that I didn't include) but now that I know these results, my brain is currently only focusing on what I can't eat instead of what I can. As any of my keto/low carb followers know, eggs and dairy are a huge part of this lifestyle, and as much as I know this is not the end of the world I need a moment to wrap my head around this 🥺☹️🤯.

Why do I feel like I'm on an episode of 🤦‍♀️ 🤣🤣🤣
Finally jumping on the cottage cheese bandwagon, and saw a recipe for cottage cheese brownies using protein powder. Sounds scrumptious right?! But, I bought pressed cottage cheese because I can't get past all of the ingredients in what should be a simple product. But I digress. I had to add more liquid because if you've ever used pressed cottage cheese it's pretty darn dry, and even with the extra liquid, the batter was REALLY thick and pasty. But, undeterred, I persevered, threw it in my little oven and.... this happened 😳🙀😳. I don't even know what I'm going to do with this LOL.
