~515 kcal | 30+ g protein | creamy, nutritious & vegan

Low-fat paneer doesn’t exist in Copenhagen supermarkets — so I did what any jugaad cook would do and swapped in tofu. Best decision ever.

This creamy tofu pasta bowl has a silky smooth sauce, sweet corn, baby spinach, and crushed walnuts and peanuts for the perfect crunch. It’s packed with plant protein, fiber, and healthy fats, making it a balanced and satisfying meal.

The best part? It’s super easy to make and ready in about 25 minutes, making it perfect for busy weeknights when you want something healthy, creamy, and delicious without spending hours in the kitchen. 🌿

⸻

🥗 Ingredients
• 36 g high-protein pasta
• 130–140 g silken tofu
• 100–120 g spinach
• 80 g sweet corn
• 10 g roasted walnuts (crushed)
• 10 g roasted peanuts (crushed)
• 10 g chilli oil / olive oil
• Garlic
• Green chilli / jalapeño
• Salt & pepper

⸻

🍳 Steps

1️⃣ Cook the pasta according to package instructions. Reserve some pasta water.

2️⃣ In a pan, cook the corn for 2–3 minutes until excess water dries up. Set aside.

3️⃣ In the same pan, spray some oil, then add garlic and green chilli/jalapeño. Cook for a few seconds until fragrant. Add spinach and sauté for 2–3 minutes until wilted.

4️⃣ Blend silken tofu with the cooked spinach until smooth to create a creamy sauce.

5️⃣ In a pan, add some chilli oil, then pour the tofu–spinach sauce back into the pan. Season with salt and pepper and adjust the consistency using reserved pasta water.

6️⃣ Add the cooked pasta and corn to the sauce and cook for 1–2 minutes until everything becomes creamy and well combined.

7️⃣ Top with crushed roasted walnuts and peanuts for crunch, healthy fats, and extra protein.

8️⃣ Serve warm and enjoy your creamy, protein-packed vegan tofu pasta bowl. 🌱💪
