Chocolate granola 🥣
Been wanting to try this granola recipe for some time now (arranged from one).
Main ingredients: buckwheat, oats, sunflower and pumpkin seeds, coconut oil, dates, ginger, apple puree, cacao powder.
Very easy to make (although the baking part take some time and you need to be careful that it doesn't burn by regularly stiring, which I forgot at some point, and some bits got burnt!) and really yummy 😋
I like the idea of making it myself as it's so expensive to buy, and it's nice to be able to control exactly the portions and what ingredients you use!
Granola is nice over overnight oats, with some fruits 🍓

Aquafaba chocolate mousse 😋
Have you ever heard of aquafaba? It's actually the viscous water in which legumes (here chickpeas) have been cooked. It's a perfect replacement for egg whites if you're vegan or can't eat (raw) eggs.
You only need 2 ingredients to make this chocolate mousse:
1) Aquafaba💧(here I simply used the leftover aquafaba from the can of chickpeas I used to make humus the other day): whisk the viscous liquid to get the same consistency as egg whites you want to get when you wish to make meringues, be patient it shouldn't be liquid at all...
2) Chocolate 🍫 (here I melted 100g of dark chocolate in a bain-marie, you can make it more chocolaty if you want, or use some cacao powder and a form of sweetener!): put in an empty bowl and gently incorporate the foamy aquafaba (don't break it otherwise you won't get a mousse).
Put in small jarrs and leave in the fridge for a few hours before enjoying your mousse (I added a few cacao nibbs before serving for a change of texture!)
Lastly, when mixing the ingredients, I added some organic cinnamon and 2 drops of dōTERRA's ginger essential oil for some flavouring. You could also add some sea salt, chili, other spices etc...

These ones are vegan and very easy to make, although the dough was a bit sticky...
I completely forgot to take a picture before they went into the oven, and also forgot to add some chocolate chips on top of them before the end of their cooking time (they would have been way nicer...) it's actually the smell that reminded me that they were in the oven...
To make the wet vegan mixture you simply need some coconut oil, sugar, vanilla extract, coconut milk/cream or other milk, apple compote. Then you add some flour, salt and bicarb, and finally the chocolate chips 😉

Thank you for your hard work during these times.
It is so important for our bodies and minds to keep on eating a variety of vegetables and fruits (fresh but also frozen or canned, as they'll have kept their nutrients). They're full of minerals, vitamins, fibres and antioxidants that support our health.
As I always tell my clients, we should all aim to eat a rainbow everyday (more vegetables (and always some green ones) than fruits. However, it's not always easy and possible to do so (especially at the moment), and it should not be an added stress; but I find it's a nice image to keep in mind. I love when my plate is colourful 🌈

Risotto aux bolets (boletus) 🍄 (fortunately not really this red one...)
If you want to make your home smell warm and like the forest, cooking mushrooms, bolets in this case, is perfect!🌲
An easy, delicious and nourishing meal for an evening in, especially since it's still chilly at night at the moment and important to feel cosy at home. .
It also brings back nice memories from last autumn when we went picking them in the forest. It's a lot of work to prepare them so they can be stored properly but then so worth it to be able to consume them all year long. 🏵️

Going from one weather to another in a day is not only a bit depressing (especially when you go from blue to grey!) but it also demands some extra self-care!🤩
I'm trying to rebalance my sleep pattern, fighting a slight jetlag and a sleepless night on the plane. But I can also feel that the air con on the plane and all the germs going around did not help...
Besides eating plenty of vegetables, warming foods, such as soups and stews, and hydrating well, I'm also supporting my body's immune responses by applying this homemade blend of dōTERRA essential oils on my spine, thymus area and soles of my feet and by drinking warm turmeric latte, using delicious organic turmeric. And tonight, I'm going to indulge myself and take a nice bath with magnesium Epsom salts mixed with essential oils which might help me sleep better, followed by a nice mojito body scrub (it was one of our make and take of our February Brighton arōma hub meet) and it smells so nice you'd want to eat it, to try to keep my tan a bit longer.
All of these little things do not take long but can really make a difference in feeling a bit better during this end of winter. Just thought it might give you some ideas 🤗

Throwback to last Summer homemade plum pie

I'm so dreaming of eating one right now...
I had brought back some plums from my parents' garden in Geneva and decided to make this fruit pie (my favourite sweet dish).
Improvised recipe for the dough: one egg (you can replace it with a flax egg), some ground almond and hazelnut, cinnamon, a pinch of salt, some cane sugar (not much but had to because the plums were not very ripe), a little bit of brown rice flour and some melted coconut oil.
It smelled so good and was so tasty, didn't stay whole for long!
Can't wait for next Summer to make another one ♥️

Evening meal 🥬🍄
I've been wanting to cook those beautiful beetroots (grown with love by my mum) for quite a while now, so I decided to roast them with with some sweet potatoes. With some garlicky-parsley mushrooms and sauteed caballero nero cabbage, it was really delicious and so easy to put together!

Such a delicious warming and comforting drink to endulge yourself with, especially in the evening for a calming night in.
Turmeric is also rich in antioxidant and has anti-inflammatoires properties, which is always great to get in some ways. .
I followed 's recipe, but replaced some of the fresh spices I did not have with some pure dōTERRA essential oils, namely cardamon, clove bud, ginger, turmeric and cassia.
I used delicious organic whole root turmeric & black pepper powder and organic ceylon cinnamon powder. Since I've tested those, it's impossible for me to use any other! .
Really yummy!

🍎APPLE CRUMBLE🍏 (gluten and dairy free)
The delicious ans sweet apples I brought back from my parents garden in Geneva were starting to look bad so I made this quick apple crumble yesterday evening! It was so yummy so thought I'd share as it is really simple! .
I coated the cut apples in cinnamon, also added some in the crumble mix 🧡
To make the crumble (although it could have been more crumbly!), you need: some oats, ground almond or hazelnut (or/and almond flour), a bit of cane sugar (if you wish to), some cinnamon and some warm coconut oil (I actually melted it as it was too cold and very hard!). Just mix everything and top the cut apples with it before putting in the oven at around 180°C.
Et voilà !
It makes a nice desert or breakfast🥄

Quick evening meal 🥦🍅🥬
I wanted to use the rest of the tomato passata I used yesterday to make some yummy pizze!
In a pan, I put half a red onion sliced (left over from another meal) with some olive oil, then added the passata and some aromatic herbs. Meanwhile, I placed the brocolis in the oven with some olive oil, salt and paper. I then added a can of black lentils (too lazy to cook some separately) to have some protein and some baby spinach to the tomato sauce.
Et voilà ! Delicious over some gluten free spinach gnocchi (or anything else actually! I'm just crazy about gnocchi at the moment...)
It was ready really quickly and such a warming dish for a cold evening 🌃
