Prawn peperonata pasta with burrata 🌿

An absolute treat for a Saturday night in with a nice cold glass of rosé or three 😜 That roast veg and pesto bread from was the biz👌🏻

serves 4
1 red onion, thinly sliced
2 peppers, thinly sliced
2 cloves garlic, peeled and thinly sliced
2 tbsp balsamic
1 tsp sugar
1/2 Tsp fennel seeds, crushed
Pinch chilli flakes
1 tin chopped tomatoes
2 x 180g raw king prawns
1 x burrata
375g spaghetti
Pea shoots or rocket to serve
Salt & pepper

In a large frying pan, saute the onion, garlic and peppers in little olive oil and k**b of butter on a low heat for 15-20 mins till tender. Add the balsamic and sugar and caramelise for a min or two. Remove half from the pan and set aside

To the pan add the tomatoes, fennel, seasoning and 100mL water and simmer for 10 mins or so till thick and reduced

Pop the pasta on to boil. Blitz the sauce in a processor or you can leave it chunky. Add the remaining peppers back in. Add the spaghetti to the sauce and toss. Serve with burrata and black pepper & a few chilli flakes if you like

Paprika chicken gnocchi

Honestly I could have face planted this as I was soooo hungry tonight! Think the boys were the same as they actually made mmm noises whilst eating this 😂 love it!!

Juicy well seasoned chicken, a super savoury sauce and a perfect ratio of pillowy to crisp gnocchi. All in one pan too - check it out below 👇

Serves 4-5
4 chicken breasts, butterflied
Chicken seasoning
2 x bags of fresh gnocchi
1 onion, finely chopped
2 cloves garlic, crushed
1 punnet mushrooms, sliced
1 Tbsp tomato purée
1 heaped Tsp Dijon mustard
1 heaped Tsp sweet smoked paprika
700 mL chicken stock
150 mL RF creme fraiche
Half a bag of spinach
Cornflour
1 ball of mozzarella

👇sprinkle the chicken with chicken seasoning. Heat a large hob/oven proof pan on medium heat, spray with oil and add the chicken and cook on both sides till we’ll seared. Remove and set aside. Spray the pan with oil and add the onions and mushrooms and sauté for a few mins. Add the garlic, tomato purée and Dijon. Add a little stock and scrape the bottom of the pan and slowly add more stock. Stir in the creme fraiche and bubble for a few mins. Thicken with a little cornflour slurry. Add the gnocchi and spinach and mix well. Nestle the chicken in and top with Mozzarella. Bake for 15-20 mins at 190 till golden and bubbling.

Carrying on the tradition I started all those years ago - making my boys’ birthday cakes 💙 (only one exception when I was v poorly I had to buy shop bought, I’m still reminded of it to this day 🤣🤣)

No matter how rough and ready they were in the early years I bloody love doing it and hope it has created some wonderful memories for them to cherish forever 💙

Pool/snooker is his current obsession so I had to indulge him. Soft Vanilla sponge, cherry conserve, chocolate buttercream. All the balls are pure fondant 😳 sugar rush incoming……💙

Herby pot roast chicken 🌿

The perfect autumn roast that just keeps giving…this gorgeous 2kg free range corn fed chicken makes 2 meals for 4 people…and the liquid gold can be used as a gravy or stock for a soup👌🏻

I prepared the bird by making a citrusy herby butter and laying in a bath of veg, stock and wine

For the herby butter, mash together a handful each of tarragon, parsley, rosemary and thyme with 50g salted butter. Then loosen the breast skin gently with your fingers then stuff most of the butter under the breast skin. Rub the remaining butter all over the skin and sprinkle with sea salt. Pop half a lemon in the cavity.

Lay the chicken in a casserole dish filled with 2 chopped carrots, 2 chopped celery sticks, 1 chopped leek, 1 bulb garlic sliced in half, remaining half of lemon, a few sprigs of thyme and rosemary, 500 mL chicken stock and 200 mL white wine

Roast at 180 fan for about 2 hours, leave to rest for 20-30 mins then set the chicken aside and carve. Smash all the veg into the liquid and strain. Use as a gravy or a stock…delish!

Hunters chicken pasta bake 🌿

A rich oozy comforting pasta bake rammed full of Smokey flavours. This went down a bomb with the boys 💣

Don’t be afraid of the list of store cupboard ingredients, you really do just b**g them all in and simmer in the time it takes to cook the pasta ✨

Serves 4-6

4 chicken breasts, diced small
4 smoked bacon rashers - cut into small strips
375g pasta
1 red onion, finely chopped
2 cloves garlic, crushed
1 tub of passata
1 Tbsp BBQ seasoning
1 Tbsp sweet smoked paprika
1 Tsp oregano
3 Tbsp balsamic vinegar
1 Tbsp white wine vinegar
2 Tbsp tomato purée
2 Tbsp BBQ sauce
1 small tin of sweetcorn, drained
100g cheddar, grated
Couple of handfuls of spinach

Pop the pasta onto boil. Sauté the chicken, bacon and onion for a few mins on a medium heat till just cooked. Sprinkle over the herbs, spices and garlic and cook for a further min. Add the passata, vinegars, purée and bbq sauce and simmer on low for 10. Add the sweetcorn and spinach for the last couple of minutes of cooking. Drain the pasta. Mix it in with the sauce and transfer to an oven proof dish, top with the cheese and grill till hot and bubbling

Braising steak, squash & bean chilli 🌶

This is one of our fave easy teas, 5 min prep and b**g it all in slow cook dish

I didn’t quite get my butt in gear in the morning to pop it in the slow cooker so I banged it In the oven instead. Either way it’s a real fam pleaser. The squash kind of melts into the sauce and it’s just delish

Note: Just reduce the water by half for the slow cooker.

Serves 4
700g lean beef stewing steak
1 onion, finely chopped
1 pepper, diced
1/2 squash, peeled and diced
1 tin mixed beans (including the water)
1 Tbsp sweet smoked paprika
1 heaped Tsp oregano
1 heaped Tsp of chilli powder (tweak for your heat preferences)
1 Tbsp cocoa powder
1 beef stock pot
1 tin of chopped tomatoes + tin full of water (oven) or 1/2 tin water (slow cooker)
2 tbsp tomato puree
Chopped coriander
Rice, sour cream to serve

Pop it all in a casserole dish or slow cooker. Mix well and cook in the oven at 150 fan for 2.5-3 hrs or on low all day in the slow cooker. Sprinkle with coriander to serve

Pork, squash & apple casserole 🎃

I adore Autumn, and the Autumn vibes are starting to creep in here in the peaks. The temps are dropping, the leaves are turning and the sun is starting to look more golden and muted. Beautiful 🥰 One thing I’m not a fan of though is losing the light for food pics 😝

This dish uses seasonal apples and squash and is a lovely alternative to an Autumn roast - but you can still serve with all the roast trimmings like I did!

Chicken Caprese burgers 🌿

Spesh enough for a Saturday night but dead easy so you’re not slaving all night!

Shortcut it further by using ready made crumbed chicken breasts - M&S do mega ones!

70g panko
40g Parmesan, finely grated
Good grind of Garlic & herb seasoning ( do a good one)
4 chicken breasts, trimmed
1 egg beaten with a splash of milk
Red pesto
Beef tomato, sliced
Ball of mozzarella, sliced
Basil leaves
4 ciabatta buns

Heat oven to 190 fan. Dunk the chicken into the egg mixture then dunk in the panko mixed with the Parmesan and garlic and herb seasoning. Place on a lined oven tray and bake for 25 mins till golden then top with mozzarella and pop back in the oven for a couple of mins. Assemble burgers with chicken, tomato, dollop of red pesto and basil leaves

Chicken Alfredo 🌿

All the carbs and protein needed after an ace BH bike ride on the 🤪
This Alfredo is a quick and easy cheesy pasta fix. Stick a fork in me, I’m officially done 😴

Recipe - serves 4-5
4 chicken breasts, trimmed
170g lighter soft cheese
75g Parmesan, finely grated
Handful of chopped parsley & chives
Chicken stock pot or cube
Salt & pepper
350g tagliatelle

Pop the tag on to boil in salted boiling water for 8 mins
Bash the chicken breasts between baking paper to flatten slightly. Season well and spray with fry light or OO. Pop a frying pan on a medium heat and cook the chicken on both sides (4-5 mins each side) till golden. Set aside and cover with foil to rest for 5 mins
Drain the pasta, reserve a mug full of pasta water and add the stock cube to the water and mix well
Return the pasta back to the pan. Add the soft cheese, Parmesan, herbs and grind of black pepper. Stir in half of the pasta water and mix gently till creamy (use a little more pasta water it still looks a little dry) Serve with the sliced chicken and some greens if you like

BBQ spiced sirloin steak with chimichurri salsa 💃

Deal me in for this dreamy piquant Saturday supper 🤩 All you have to do is chop some spuds and make an easy salsa (plus griddle the steak!)

Deets for 2: Heat oven to 200 fan. Slice 3 large baking potatoes and cut into skinny fries. Rinse and dry well then spread on a sprayed lined baking tray - the bigger the better. Sprinkle well with BBQ seasoning and spray light/OO. Bake for 30 mins turning every now and again till crispy and golden

For the chimichurri salsa, finely dice 2 tomatoes, add to a bowl along with 1 crushed garlic clove, a Tsp chopped green chilli, handfuls of chopped parsley, Tarragon and oregano. Stir in a couple tbsp red wine vinegar, a Tsp of EVOO, and season well

For the steak spray with EVOO and bbq spicing. Cook in a hot as hell griddle pan for a couple of mins on either side

Serve the steak sliced, with the chips, a few leaves dressed in balsamic & EVOO and that beautiful chimichurri salsa 🤩

Ranch chicken pasta 🌿

A super light and zesty summer pasta bowl. Dead easy to make and ready in no time. Perfect midweek scran. Fill your face here ⬇️

Recipe, serves 4
100g low fat soft cheese with herbs
150g Greek natural yogurt (I used fat free)
3 chicken breasts, diced small
Handful each of chives, dill and parsley
1 heaped Tsp Cajun spice
2 crushed garlic cloves
Juice of half lemon
350g wholemeal pasta
4 lean back bacon rashers, chopped into strips
Seasoning
Parmesan to serve

Pop the pasta into to cook in salted boiling water for 8-10 mins.
Sauté the bacon in a little spray, on a medium heat till crispy. Remove and set aside.
In same frying pan, sauté the chicken till just cooked, then throw over the Cajun spice and garlic and stir. Stir in the soft cheese and natural yog and season. Add a small ladle full of pasta water and stir in the herbs and lemon juice. Simmer for a minute or so. Drain the pasta and add back to the pan and pour over the chicken and sauce. Serve sprinkled with bacon and Parmesan. Lush.

Cod & butterbean stew with zesty pesto 🌱

After a wonderful break in the Cornish sunshine, it’s time to snap back to reality and feed the brood some healthy scran 😝

This summer stew is chock-full of veg and protein with a cheeky light & zesty pesto to make the cod sing. Don’t forget to use quality tinned tomatoes to avoid a watery sauce. Get yours ⬇️

4 skinless cod loins, patted dry
1 small onion, finely chopped
1 courgette, diced
2 carrots, peeled and diced
3 cloves garlic, crushed
1 tin of cherry tomatoes
1 tin of polpa
1 veg stock pot or a tbsp of .uk
1 Tsp oregano
1 tin butter beans, drained
Handful of chopped parsley
Seasoning

Pesto:
40g watercress, spinach and rocket leaves mix
1 small garlic cloves, crushed
30g grated Parmesan
Juice and zest of a small lemon
15g pine nuts
2 Tsp olive oil
Seasoning

In a large shallow pan (with a lid) sauté the onion and carrot in a little spray on a med/low heat for about 5 mins. Add the courgette and cook for a further few mins. Stir in garlic. Add the tomatoes, stock, oregano, butterbeans, and rinse each tomato tin out with a quarter tin of water. Season to taste. Stir and pop the lid on, leaving it slightly ajar. Simmer on low for about 15 mins till reduced

In the meantime blitz the pesto ingredients

Add the parsley to the stew and stir. Pop the fish in and replace the lid. Simmer for a further 5 mins till just cooked through. Top with the pesto and serve
