Peak strawberry season means one thing: this ridiculously good salad. πŸ“

All you need is:

πŸ₯— 95g raw pecans
πŸ₯— Β½ small red onion, very thinly sliced
πŸ₯— 300g fresh baby spinach
πŸ₯— 400g strawberries, quartered
πŸ₯— 250g crumbled feta

For the dressing:

πŸ₯— 60ml balsamic vinegar
πŸ₯— 3 tbsp Raw Vibrant Living Extra Virgin Olive Oil
πŸ₯— 1 Β½ tsp poppy seeds
πŸ₯— 1 Β½ tsp Raw Vibrant Living Tropical Forest Honey
πŸ₯— Β½ tsp Dijon mustard
πŸ₯— Β½ tsp flaky salt
πŸ₯— β…› tsp black pepper

Here’s how:

1. Preheat the oven to 180Β°C / 160Β°C fan. Spread the pecans on a baking tray and toast for 8–10 minutes until golden and fragrant. Set aside to cool.
2. In a small bowl, whisk together all the dressing ingredients until smooth and emulsified.
3. In a large serving bowl, layer the spinach first, followed by the strawberries and thinly sliced red onion.
4. Drizzle over half the dressing and gently toss until everything is lightly coated.
5. Roughly chop the toasted pecans and sprinkle over the salad, then add the crumbled vegan feta.
6. Add a little more dressing to taste, give everything one final toss, and serve.

And we're celebrating with these Gut-Friendly Strawberry Chia Seed Pudding Bites. Chocolate, strawberry, chia seeds - the trio we didn't know we needed. Make a batch and try not to eat them all at once. 🍫

You'll need:
πŸ“ 300g strawberries
πŸ“ 2 tbsp RAW Black Chia Seeds
πŸ“ 2 tbsp maple syrup
πŸ“ 2 tbsp desiccated coconut
πŸ“ 100g dark chocolate

Here's how:

1. Mash the strawberries in a bowl, then mix in the chia seeds, maple syrup and coconut until you get a jam-like consistency.
2. Spoon a tablespoon of the mixture into mini cupcake liners and freeze for 3-4 hours until solid.
3. Melt the chocolate in the microwave in 30-second increments, stirring between each one.
4. Dip each frozen bite into the melted chocolate and place back on the plate. Drizzle over any remaining chocolate.
5. Refrigerate or freeze until the chocolate sets.
6. Top with a pinch of flaky salt and enjoy.
