T/W Mental Health and Self Harm 💔

Just popped on here briefly to give an update as to my absence of late. Our family has been thrust into a dark and terrifying world and we are trying our best to navigate through an incredibly emotionally challenging time. In December ‘21 my middle son (then 6 years old) changed drastically overnight. From a sweet, happy, silly kid to an angry, volatile, anxious, self harming and at-times suicidal scared little boy. After months and months of anguish, we discovered that he has a rare condition called PANDAS, which isn’t anywhere near as cute as it sounds, because it stands for Pediatric Acute onset Neuropsychotic Disorder after Strep. His immune system produced antibodies that were supposed to fight the strep infection, but instead have mistakenly attacked his healthy tissue, causing inflammation of his brain, along with causing huge immune dysregulation.

All of his reactions are completely out of his control and it is notoriously difficult to treat. It’s beyond scary and distressing for all of the family and I would go as far as to say that we are suffering from PTSD from the horrors that we have witnessed over the past 9 months. It’s emotionally exhausting in a way that I just can’t possibly put into words. He hasn’t been at full time school for 6 months and I’ve had to give up work (and pretty much everything else) to look after him which is why you haven’t seen any recipes from me in a while.

Speaking out during tough times isn’t something that comes naturally to me, I usually wait for the storm to pass before being able to digest things. But I can finally see a vague hope of light at the end of this long & heartbreaking tunnel. If anyone reading this has a child who suddenly developed severe psychiatric symptoms out of the blue, please feel free to get in touch because the PANS/PANDAS community has really helped me navigate this very cruel and confusing illness. 💔

Watermelon & Mint Slushie 🍉

So quick and easy to make, and a delicious way to stay hydrated in this heat! ☀️ Plus, it’s a great way to add some of the potent antioxidant lycopene into your family’s diet. 💪

🍉Simply scoop out the flesh of 1/2 watermelon into a high speed blender.
🍉 Add a handful of fresh mint leaves, a handful of ice and a tbsp of chia seeds.
🍉 Blitz on high.
🍉 Pour the slushie back into the watermelon rind bowl, grab the straws and enjoy!

Fighting against perfection.  Rebelling against the need to be flawless. 🚫
These little squares are all too often filled with “perfect” portrayals of people’s lives – whether it’s the overly-styled food they eat (ahem, guilty!🙋🏻‍♀️) or the ridiculously filtered selfies – none of it is real and makes us feel properly 💩 about ourselves.  The correlation between social media and low self-esteem/depression are just horrifying. Especially since it’s – I say not today my friend, not today! 
 
Today I am posting my latest kitchen disaster!  Something that took me hours to prepare – I lovingly made the pie crust.  I patiently chopped and sauteed the veggies.  I gently mixed and heated the filling….and what came out?  A splodgy mess!  As soon as I sliced it, it totally crumbled and the filling just wouldn’t hold and all came oozing out.  So not only could I not even eat it, I also couldn’t use it for the blog so I literally wasted precious hours of my day. 🤦🏻‍♀️

Wild Garlic Soup with Wild Garlic Pesto 🌱🥣

Having made wild garlic pesto and wild garlic butter and STILL having a ton of leaves left, I really didn’t know what to do with them! 🤷🏻‍♀️So I experimented making a soup and I’m SO very glad I did - it was utterly delicious! Equally tasty hot as it is cold, this soup is a wonderful one to stock up the freezer with.

One portion provides 157 calories with 8g of protein and 6g of fibre. 👊🏻As well as 31% of my vitamin C and 23% of my daily calcium. That makes this bowl of deliciousness a wonderful little nutritional boost.

💚INGREDIENTS

* 1 Large Onion - chopped
* 300g Potatoes - peeled and chopped
* 150g Wild Garlic Leaves - washed
* 250g Frozen Peas
* 750mls Vegetable Stock
* 60mls Cream - I used Oat Cream
* 1 tbsp Pesto - I used homemade Wild Garlic Pesto (recipe to come!)
* A little oil or butter to sauté the onions
* Salt & Pepper to taste

💚METHOD

* Peel and chop the onions and potatoes
* In a large saucepan, heat a little oil or butter over a medium heat and add the onions to sauté.
* Once they start to brown, add the vegetable stock and the potatoes and simmer for 10 minutes before adding the frozen peas.
* Continue to cook over a medium heat for another 10 minutes before adding the wild garlic leaves, and season with salt and fresh black pepper.
* After they have wilted (approximately 4 mins), remove from the heat and carefully pour the soup to a high speed blender, along with some cream and the pesto.
* Blitz on high until smooth.
* Serve with an extra dollop of pesto, a drizzle of cream and some croutons.
* Enjoy!

Leek, Kale & Ricotta Pesto Frittata 🥬 🍳

So many delicious flavours, so easy to throw together, so full of goodness….so whaddya waiting for?? 🤗

It really makes the perfect any-time-of-day meal and I’m not even going to try to be humble about it…this version is just another level of tasty! 😍

It’s a great way of packing in a ton of vegetables and to be honest, this particular concoction was born out of what was going off in my fridge at the time. The poor veggies were just about clinging on to life when I threw them in! That’s the beauty of making frittatas - it’s so versatile that really any veggies work, as well as any cheeses and fresh herbs too. 🧀🍅

Whilst it can be served on its own as a lower calorie, low carbohydrate meal; I like to serve it with some wholegrain bread instead, like this chia & rye loaf from for a more balanced, well-rounded meal. One portion provides 294 calories, 19g of protein, a quarter of my vitamin C, 69% of my calcium and a whopping 184% of my daily vitamin A requirements. This makes it an all-round nutrition powerhouse of a meal! 💪

What is my “WHY?” 🧐

Everyone has their own path that led them to their journey. And up until now, I’ve been too scared to share why I do what I do - a topic very close to my heart and one that the lovely wanted to print.

“I have always had a huge enthusiasm for cooking - ever since I was little, all I wanted to do was be in the kitchen with my mum, creating something delicious. But it was only really upon discovering that my husband has a BRCA 1 gene mutation that things really changed for us. This gene mutation makes him more susceptible to certain types of cancers, and my kids have a 50% chance of inheriting the faulty version of the gene, which is particularly concerning for my daughter because the stats for women developing breast and/or ovarian cancer are really quite scary. I won’t sugar-coat it, when I found out, I was pretty terrified! It felt like this awful dark cloud looming over us as a family. There is currently nothing that can be done to fix this mutation but, particularly with my scientific background, I didn’t want to just accept a ‘hope for the best’ approach. I wanted to be as proactive as possible and make our family as healthy as I possibly could. So we changed what was in our control - our diet and lifestyle - to give my husband (and potentially my kids too) the best chance of staying cancer-free. 

That’s when I really began to understand the power food has in supporting good health and wellbeing. I strongly believe that nutrition can be used as an incredibly powerful preventative tool. In light of all of this, I decided I wanted to know more, so I studied Nutrition in Practice at It was a fabulous combination of nutrition and practical cooking lessons from their chefs. Completing that course left me with a passion for maximising the nutritional content of all of our food, without ever compromising on taste; plus a burning desire to share all that I had learned. Since then, I have made it my mission to help others create healthy, delicious and nutrient-dense food, without any faddy diets.”

❤️Well hello there! ❤️

It’s been a while since I’ve been on these little squares. A combination of a major operation, swiftly followed by all 5 of us finally succumbing to Covid will do that to a person! 😷🤒

But I couldn’t let this day go by without posting one of my most delicious It’s an old recipe of mine but still one of my absolute favourites.

This is THE ultimate indulgence — but as always, is jam-packed full of micronutrients, so no need to scrimp on the nutrition just because it tastes so divine! It is raw goji-berry gooiness and creamy salted tahini caramel, sandwiched between a sweet nutty base and a crisp chocolate topping. What’s not to fall head over heels in love with?! ❤️

Christmas Indulgence 🍪🎄

Clients and friends are often quite surprised to see me indulging in so-called “unhealthy” foods….as if I’m not practicing what I’m preaching! But life is about balance and moderation, but most importantly about GUILT-FREE enjoyment! Food is more than just a mouthful of calories - it brings people together, it gives comfort and it should be such a source of joy!…..And let’s face it, with the news at the moment, we could all do with some extra merriment! 🥳

So I fill my family’s diets with as much nutritionally dense food as possible - we have good quality protein, lots of high fibre whole grains and legumes, a ton of fruits and veggies and healthy fats. I always like to look at my plate and think to myself “what can I ADD to this meal to maximise it’s nutritional content?”, whether it’s sprinkling on some h**p seeds to my toast and nut butter, or adding an extra veggie to my stir fry.🥦🥕🍅

Having said that, we also (thoroughly and guilt-free!) revel in opening chocolate advent calendars at 7am and enjoy all the mince pies, gingerbread men and marshmallowy hot chocolate that makes this season so magical! 🥧🍬🍪

In 2019, The Lancet published an article about a 27 year study into the health effects of dietary risks in 195 countries. And I found the results pretty surprising - swipe ➡️ for an interesting graphic. Apart from the fact that the biggest dietary risk factor was too much sodium, the next top 8 mortality risks were diets LACKING in whole grains, fruits, nuts and seeds, vegetables, Omega 3s, fibre, polyunsaturated fats and legumes. That just blew my mind! I would have initially guessed that a diet of too much sugar, processed meats or trans fats would be up there as the top reasons. But it was mainly what was lacking in peoples diets that contributed to their mortality. So my ethos around food is to fill up your diets with the “good stuff” and then blissfully savour every single mouthful of your loaded chocolate Yule log. 😋

A match made in foodie heaven! And if you’re stuck in a food rut, then this recipe is perfect to add a little pizzazz to your plate! 🤗

Have a look at my IGTV tutorial to see how this seemingly-fancy dish can be made with minimal prep. It is as delicious hot as it is cold, so I always make double (or triple!) to have enough leftovers for a salad the next day. It’s full of micronutrients and is such a tasty and versatile meal; as it can be enjoyed as a side dish, a main meal with some added lentils or it can be thrown into a salad. 👍

I topped it off with some pomegranate seeds, some sprouted radish and .my.salad activated seeds (not sponsored, just love the brand!).

Baobab Pink Protein Porridge in honour of 💗🥣

Sadly, like many families, ours has also been left devastated by a loved one passing away from breast cancer. It is the most common in women in the UK, with one woman being diagnosed every 10 minutes, and 1 in 7 being diagnosed in their lifetime. There will be a huge 5,000 women diagnosed with it in this month alone! And the risk of developing breast cancer increases hugely if you have a BRCA gene mutation to a massive 72%!!

The amazing does the most mind blowing pioneering research into and how to reduce a women’s risk of developing breast cancer without having to take the drastic action of preventative risk reducing surgeries. Please do check them out - they are a wonderful charity specialising in gynaecological cancers and any donation would be greatly received so that they can continue their incredible work.

Is there a greater mood booster??When the sun is shining, all is right in my world. 🙂Conversely when it’s raining, I’m blooming miserable! ☔️

As someone that gets pretty badly affected by S.A.D, I’m trying to cling on to the last few rays as best I can.
For as long as I can remember (going back more than 20 years), between October - April I have a significantly lower mood, feel constantly sluggish, have trouble concentrating and just feel all round bleugh 😩

But from April onwards, I feel myself shedding my emotional cocoon and my zest for life has been restored! I can bound out of bed in the mornings, I feel immeasurably happier, more ambitious, more energetic and all round brighter! 👍

Can anyone else relate?
Any tried and tested tips?
I just bought one of those light therapy boxes so 🤞🏼🤞🏼
