Coconut cranberry chia pudding with blood oranges by 💛
Ingredients (one serving*):
3 tbsp chia seeds
1/4 cup canned coconut cream/milk
1/4 cup coconut water/ water
Juice of one blood orange
2 tbsp cranberry powder
1/2 tsp vanilla extract
Optional: 2 tsp liquid sweetener
1 blood orange for garnish
*this recipe easily doubles, triples and quadruples, so you can make it for yourself to eat all week
Method:
1. Mix chia seeds, 1 tbsp cranberry powder, coconut milk, water and sweetener in a small bowl or jar. Let it set in refrigerator overnight or for at least 20 min.
2. Remove it from the fridge. Add the blood orange juice and stir to combine
3. Top with 1 tbsp cranberry powder and serve with peeled and sliced blood orange
