🧁 Ingredients

For the cake:
• 2 cups flour
• 1 cup cocoa
• 2 teaspoons baking powder
• 1½ teaspoons baking soda
• 1½ cups granulated sugar
• 1 cup buttermilk (or 1 cup milk + 1 teaspoon lemon juice/vinegar)
• ¾ cup vegetable oil
• 3 large eggs
• 2 teaspoons vanilla extract

For the Truffle Cream:
• 200 g dark chocolate
• 200 ml cream
• ½ cup grated coconut
• 2 tablespoons butter

For the topping:
• Shredded coconut
• Chocolate chips or ganache (optional)



👩‍🍳 Preparation

1️⃣ Prepare the cake
1. Preheat the oven to 175°C. Grease two 22–24 cm round cake pans and line the bottoms with parchment paper.
2. In a large bowl, mix the flour, cocoa, baking powder, baking soda, and sugar.
3. In a separate bowl, whisk together the buttermilk, oil, eggs, and vanilla, then add the dry ingredients.
4. Mix until you have a smooth batter.
5. Pour the batter evenly into the pans and bake for 30–35 minutes. A toothpick should come out clean.
6. Let the cakes cool.



2️⃣ Prepare the Truffle Cream
1. Heat the cream, but do not boil.
2. Add the chopped chocolate and stir until melted.
3. Add the butter and coconut, and mix until you get a smooth and thick cream.
4. Let it cool to room temperature.



3️⃣ Assembly
1. Place the first cake layer on the plate, spread a generous amount of truffle cream on top.
2. Add the second layer and cover the top and sides with the remaining cream.
3. Garnish the top with shredded coconut and optional chocolate chips.



💡 Tip:
If you let the cake rest in the refrigerator overnight, the cream will set perfectly and the coconut flavor will be more pronounced. 🥥✨

Ingredients

For the Cake
• 2 cups (250g) all-purpose flour
• 1½ cups (300g) sugar
• 1 cup (240ml) vegetable oil
• 4 large eggs
• 2 cups (200g) grated carrots
• ½ cup (60g) crushed pineapple, drained (optional for extra moisture)
• 1 tsp baking soda
• 1½ tsp baking powder
• 1½ tsp ground cinnamon
• ½ tsp nutmeg
• ½ tsp salt
• 1 tsp vanilla extract
• ½ cup (60g) chopped walnuts or pecans (optional)

For the Cream Cheese Frosting
• 225g (8 oz) cream cheese, softened
• ½ cup (115g) unsalted butter, softened
• 2½ cups (300g) powdered sugar
• 1 tsp vanilla extract

Instructions

In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
Add oil, eggs, and vanilla extract, then mix until smooth.
Fold in grated carrots and pineapple until evenly combined.
Add chopped nuts if using.
Divide batter evenly between two greased and lined 8-inch (20cm) round pans.
Bake at 170°C (340°F) for 30–35 minutes or until a skewer inserted in the center comes out clean.
Cool completely before frosting.

For the frosting, beat cream cheese and butter together until creamy.
Add powdered sugar gradually, then mix in vanilla extract until smooth and fluffy.

To assemble, place one cake layer on a plate, spread frosting on top, then place the second layer and cover the top and sides with the remaining frosting.

Greek Chicken Wraps with Tzatziki Sauce

Ingredients:

1 lb (450 g) boneless, skinless chicken breasts, cut into strips

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon ground cumin

½ teaspoon smoked paprika

Juice of 1 lemon

Salt & black pepper, to taste

4 large pita breads or flatbreads

1 cup (150 g) cherry tomatoes, halved

1 cucumber, diced

½ small red onion, thinly sliced

½ cup (75 g) Kalamata olives, pitted and halved

½ cup (75 g) feta cheese, crumbled

For the Tzatziki Sauce:

1 cup (240 g) Greek yogurt

½ cucumber, grated and squeezed dry

2 cloves garlic, minced

1 tablespoon lemon juice

1 tablespoon olive oil

1 tablespoon fresh dill, chopped

Salt & black pepper, to taste

Directions:

In a bowl, combine olive oil, garlic, oregano, cumin, paprika, lemon juice, salt, and pepper. Toss chicken strips in the marinade and let sit for at least 15 minutes (or up to overnight).

Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–6 minutes per side until golden brown and fully cooked.

In another bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper to make tzatziki sauce.

Warm pita breads, then fill each with chicken, tomatoes, cucumber, onion, olives, and feta. Drizzle generously with tzatziki.

Wrap and serve immediately.

½ cup whole milk

For the Cherry Filling:

2 cups fresh or frozen cherries, pitted

½ cup granulated sugar

1 tbsp cornstarch

2 tbsp water

1 tbsp lemon juice

For the Whipped Cream:

2 cups heavy cream

¼ cup powdered sugar

1 tsp vanilla extract

For Decoration:

Dark chocolate curls

Instructions:

Prepare the Chocolate Sponge Cake:

Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans.

In a bowl, whisk together flour, baking powder, cocoa powder, and salt.

In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla.

Gradually add the flour mixture, alternating with milk, beginning and ending with the flour mixture. Beat until just combined.

Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.

Prepare the Cherry Filling:

In a saucepan, combine cherries and sugar over medium heat. Cook until the cherries release their juices.

Ingredients

2 cups heavy cream (chilled)

3/4 cup granulated sugar

3 tbsp instant espresso powder (or very strong brewed coffee, cooled)

1 tsp vanilla extract

For the Toppings:

Whipped cream

Fresh strawberries & blueberries

Chocolate chips (mini)

2 Oreo cookies (or any chocolate cookies)

Instructions
Step 1 – Make the Coffee Ice Cream (if homemade)

In a saucepan, whisk together milk, sugar, and espresso powder until dissolved.

Remove from heat and stir in heavy cream and vanilla.

Chill mixture in the fridge for at least 2 hours.

Pour into an ice cream maker and churn according to manufacturer’s instructions. Freeze until firm.

2 sheets puff pastry (thawed)

200g Brie cheese, sliced

150g cranberry sauce (whole berry or homemade)
