Smoked BBQ Beef Ribs with Loaded Mashed Potatoes
Ingredients:
Smoked Beef Ribs
1 rack beef back ribs (about 1.5–2 kg)
2 tbsp yellow mustard
2 tbsp coarse black pepper
2 tbsp kosher salt
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp chili powder
1 cup barbecue sauce
Loaded Mashed Potatoes
4 large potatoes, peeled
4 tbsp butter
½ cup heavy cream
1 cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
2 tbsp chopped chives
Salt and black pepper
Sides
2 ears corn on the cob
1 cup coleslaw
1 bunch asparagus
1 tbsp butter
Instructions:
1. Remove the membrane from the back of the ribs and coat them lightly with yellow mustard.
2. Mix the salt, black pepper, smoked paprika, garlic powder, onion powder, and chili powder. Rub the seasoning generously over all sides of the ribs.
3. Smoke the ribs at 120°C (250°F) for 5–6 hours, or until the meat is tender and reaches an internal temperature of about 95°C (203°F).
4. During the final 30 minutes, brush the ribs with barbecue sauce and continue smoking until the glaze becomes sticky and caramelized.
5. Boil the potatoes until fork-tender. Mash with butter and heavy cream, then stir in the cheddar cheese. Top with the bacon bits and chopped chives.
6. Grill the corn and asparagus with a little butter until lightly charred and tender.
7. Arrange the glazed smoked ribs on a serving plate with the loaded mashed potatoes, grilled corn, coleslaw, and asparagus.
8. Brush the ribs with an extra layer of warm barbecue sauce, garnish with chopped chives and cracked black pepper, and serve immediately while hot.
