May blossom cordial 🌸 made with hawthorn flowers and elderflower, honey and spring water. Harvesting the hawthorn flowers was a true labour of love - rather fitting with hawthorns affinity to the heart 💗
I had intended to make hawthorn flower cordial but was slightly short with the hawthorn flowers so added elderflower to make up the weight, turning this into a May blossom cordial with the flavour of both of these seasonal blooms really complimenting each other ✨
Use 200g of flowers
200g of honey (or sugar)
1 litre of water
Heat the water and mix in the honey/sugar until dissolved. Take off the heat and add the flowers, pressing them into the water. Leave covered for a few hours to infuse and then strain into sterilised bottles. Mix with either still or sparkling water for a beautiful spring drink 🌿
