Just look at the incredible patterns on Alma Ceremonial Cacao.

This is cacao bloom 🤎

Those beautiful, swirling patterns you sometimes find across a block of Alma aren’t mould or a quality flaw. They’re cacao butter, the healthy natural fat within the cacao, crystallising and rising to the surface.

Unlike conventional chocolate (and even some cacao), our cacao isn’t tempered to create a perfectly uniform, glossy finish. It is made in small batches, ground into a paste and formed into blocks, with as little interference as possible.

That means every batch, and sometimes every block, carries its own little variations. Changes in temperature, cooling and the natural composition of the cacao can all influence the patterns that emerge.

We love them and like to think of this as the unique individual fingerprint of every block of Alma. No two are ever identical. Each one is shaped by the beans, temperature and humidity as the blocks set.

We’ve been a little quiet lately as we’ve moved our home from the city out into the hills of Northumberland. It’s been quite the process and taken a lot more energy and time that we could have imagined.

But we’re finally emerging back into the world and what better way to celebrate than announcing a brand new cacao origin that we’re adding to the Alma Family!

Introducing El Mestizo (‘The Blended One’)

Our new three-origin blend, crafted from sustainably grown and ethically sourced whole cacao beans from three exceptional growing regions across Guatemala: Río Dulce, Suchitepéquez and Las Victorias.

El Mestizo (“the blended one”) celebrates the diversity of Guatemalan cacao. Each origin has been carefully selected for the qualities it brings to the blend before being traditionally prepared by the Los Manos de La Tierra Collective in Tzununa.

This isn’t a replacement for our signature single-origin Las Victorias cacao. This is a new addition to the Alma Family - a new and entirely unique expression of Guatemalan cacao.
