Over the last 9 months or so I had almost completely stopped cooking. Moving, a break up, chronic anaemia, Covid and suspected long Covid have really made self care tricky.
I was diagnosed with depression and started on antidepressants around 3 months ago and have started to feel the darkeness lift and I can see the beautiful world around me again.
I’ve given myself patience and rest and finally (maybe because of the good weather) I’ve gotten back in to cooking.
Tonight’s warm salad was absolutely delicious…
Red lettuce
H**p seeds
Tahini,maple lemon dressing
Brown rice and quinoa (yes from a packet)
Roasted potatoes, broccoli, cauliflower and onion.
I added thyme, sumac, olivr oil and Lemon juice to the veggies as they roasted (inspired by 😋)
SO TASTY!!
The world is on fire and I’ve just come out of what felt like hibernation but it feels good to know I can turn to beautiful local produce and the flow of cooking to soothe my weary soul!
