How is it May already?!

Another week of walks, spending time with family, and making progress with my reading goals 🥰

I've not had much interest in cooking lately, which is something I used to love doing

I'd had a busy few weeks at work with lot's of late nights and was mostly eating UPFs and convenience foods

But after consistently going to the gym for the last 3 weeks and finally getting back into a routine with my sleep, I want to actually fuel my body properly and am enjoying cooking again

A few of this weeks meals:
1️⃣ Taco beef & bean potato bowl - this is a new favourite of mine and really easy to make
2️⃣ Taco beef and bean quesadillas - used the left over beef, salsa and guacamole to make a quick dinner before work
3️⃣ Sausage, bacon & spinach breakfast muffin - this has been my go to breakfast this week, i use bacon medallions and heck sausage rashers to make it lower calorie, keeps me full till lunchtime
4️⃣ Tuna & cheese jacket potato - I absolutely love a jacket potato, so many different options for toppings too!
5️⃣ Chicken tikka biryani - went out for a meal with friends last night, chose the biryani just because it's what I felt like eating, before I worked on my food relationship having a meal out would have caused me to go into f*ck it mode, now I know that one meal, out of the 21 meals i eat in a week, isn’t gonna ruin my progress!

Being in a calorie deficit doesn't have to mean eating plain, boring foods all the time! You can still eat foods you enjoy, and even have the occasional meal out too

My reading goals for May 📚

Books and reading have always been a huge part of my life, it's my favourite way to relax and unwind at the end of the day

Reading in the evening, instead of watching tv or doom scrolling on my phone, (which to be honest, I've been doing a bit too much of lately 👀) always helps me to sleep better

And when I have better sleep, it massively impacts other areas of my life like how much movement and exercise I do, my food choices, and my mood and mindset

So I'm setting myself a goal to read these 3 books in May, and I can’t wait to get started!

1️⃣ Beef tacos - lean minced beef with taco seasoning, mini tortillas, grated cheese and salsa made with tomato, cucumber, red onion, coriander and lime

2️⃣ Greek chicken potato bowl with tatziki - chicken seasoned with garlic and onion granules and oregano, roasted mini potatoes, tatziki, and salad made with tomato, cucumber, red onion, basil and lemon

3️⃣ Red pesto, chicken and spinach pizza - flatbread topped with red pesto, cooked chicken, spinach and grated mixed cheese

4️⃣ Taco beef potato bowl - taco seasoned lean minced beef, mini roasted potatoes, tomato, red onion, coriander and lime salsa, grated cheese and Greek yoghurt and hot chilli sauce

5️⃣ Chicken and vegetable curry - chicken and vegetables, chopped tomatoes, curry powder, rice and poppadoms

I've tried so many things over the years to lose weight, low calorie diets, meal replacements, slimming clubs, you name it, I've probably tried it!

Initially, I wanted to study nutrition to help me improve my own diet and relationship with food.

After gaining my qualification, I wanted to create a space where women can feel supported and have access to evidence based information instead of all the diet culture BS, misinformation and fear mongering online.

Can you lose fat and still eat pancakes?

Absolutely.

​Sometimes a busy schedule means choosing convenience, and that is 100% okay.

These are shop bought pancakes topped with raspberries and a drizzle of caramel (been out all day so couldn't be bothered to make my own 😅)

​You don't have to quit the foods you enjoy to see progress.

It’s all about balance, awareness, and fitting the things you love into your lifestyle.

This isn’t about stopping yourself from eating.
It’s about slowing things down just enough to check in.

Sometimes food is exactly what you need.
