Dinner tonight was Peri Peri turkey meatballs and rice. Absolutely delicious. The sauce is loaded with soffritto veggie mix and it was one the whole family enjoy. Thanks to Peggy Dooley for the fantastic find of frozen Basmati rice and veg from Dunnes. All this for only 1 Swip for some breadcrumbs. I think this defo needs a video! Keep your eyes peeled 👀

High protein Overnight Oats

My twist on a tasty and comforting Shakshuka. Full of flavour and protein. Can be eaten as breakfast, lunch or dinner. And it’s SP friendly. Broghies Broghies Ireland
Harissa spice mix is just:
Chilli flakes
Paprika
Garlic granules
Coriander
Onion granules
Cumin

Dinner was unreal! 🤩 Crispy potato cubes 🥔 topped with a gorgeous Swip-free taco mince 🌮. I finished it with 20g of taco sauce for just 3 Swips. Could I make a lower Swip sauce? Absolutely… but I’ve plenty of Swips left to enjoy today! 😉

The real magic is this free taco seasoning from Tesco ✨, and the cheese is also from Tesco – 50g counts as a Healthy Extra Calcium Choice 🧀.

The mince is packed with hidden veggies too, so can the Speed Police 👮🏻🤐 please look the other way! 😂 My secret ingredient? Just a pinch of MSG for that proper takeaway flavour! 😍 10/10 ⭐️
