๐ฅฉ๐งBBQ Beef Bolognese๐ง๐ฅฉ

1 cal cooking spray
250g lean beef mince
(5% fat or less)
4 spring onions, thinly sliced
1 medium carrot, coarsely grated
Mushrooms and mixed peppers
1 level tbsp sun-dried tomato paste
4 tsp chopped garlic
1 tbsp soy sauce
1 tbsp balsamic vinegar
1 tsp smoked paprika
1 tsp dried oregano
200g passata
ยฝ beef stock cube, crumbled
200g fresh spaghetti
110g mixed baby tomatoes,
halved
fresh basil leaves, to serve
Method -
1. Spray a large non-stick frying pan with cooking spray and put it over a high heat. Tip the beef into the pan along with vegetables. Cook for 4-5 minutes or until browned all over, breaking up the beef with a wooden spoon.
2. Add the sun-dried tomato paste, garlic, soy sauce, vinegar, paprika and oregano to the beef. Stir well and cook for 1 minute, then add the passata, stock cube and 150ml boiling water and simmer for 4-5 minutes or until slightly thickened.
3. At the same time, cook the spaghetti according to the pack instructions.
4. Divide the spaghetti between bowls, add the tomatoes to the bolognese and spoon it over the spaghetti. Scatter with the basil leaves.
