Young children are being taught how to taste and assess olive oil in Italy and Spain. The hope is that they will cultivate a taste for excellence in olive oil early in life, as well as encourage their parents to buy quality extra virgin olive oil.

I think the Mediterranean Diet Pyramid makes much more health sense than the normal Food Pyramid (ref: The 7 Wonders of Olive Oil). Part of this diet is high quality extra virgin olive oil - take 2/3 tablespoons per day to get the health benefits🍈🥄🥄🥄

WHITE CANNELLINI BEANS WITH GARLIC & SAGE
A simple snack and very easy to make!
Pour a good extra virgin olive oil into frying pan.
Add a few cloves of chopped garlic.
Add in 10 sage leaves.
Add 400g tinned cannellini beans with some of the water.
Keep stirring until the beans are creamy
Spread on sourdough bread and drizzle on more olive oil (a peppery oil is best)

Andrea from Fontana dei Santi sent me their new harvest extra virgin olive oils from Italy. Two of them are pictured here - great oils - a fruity Coratina with good bitterness and pepperiness (one of my favourite olive varities) and Fasola which I hadn't tried before, less fruity but more bitter and peppery. The more bitter and peppery the oil, the higher the polyphenols and the more healthy it is. Their logo also fits in very well with the season😁🎄

Karen Cryan is Ireland's only Extra Virgin Olive Oil Taster/Sommelier. An olive oil taster uses sensory analysis (aroma and taste) to determine the quality of an olive oil. For olive oil to be extra virgin, it has to have a fresh fruity aroma, be free from any defects and have a certain level of fruitiness, bitterness and pepperiness. Extra virgin olive oil is viewed as a condiment by Tasters, it is used to flavour a wide variety of dishes. It can have aromas and tastes of everything from banana, apple, tomato, artichoke, herbs and almonds to tropical fruits and chocolate, much like wine tasting. It can be paired with both savoury and sweet food.
