36 meals, a variety of snacks, fruit and protein shakes all planned out and prepped.

It is a great idea to stockpile a few meals each time you batch cook for when we are a little less than enthusiastic in battling the bulge.

6 portions of chilli and pilau rice
6 portions of Quorn shepard pie
8 portions of Quorn lasagne
8 portions of Quorn enchildas
8 portions of baked Spanish fritata

700kcal - 57g Protein - 24g Fat - 60g Carbs

I used 220g of pieces
Sliced peppers and onions
1/4 of smokey bbq fajita seasoning

Crispy Baked PeriPeri Tofu

Recipe:
2 portions -
(340kcal, 22g Protein, 16g Fat, 22g Carbs per portion)
1 pack of cut into 9 strips
1 bowl ~ 3 tbsp of cornflour
1 bowl ~ with some milk (I used almond)
1 plate ~ 35g Obento Panko breadcrumbs, 1/2 tsp smoked paprika, 1/2 tsp garlic granules, a sprinkle of parsley, 1 tsp of olive oil all mixed together.

Dip tofu strips individually into cornflour to coat lightly, then into the milk (it will now feel like a batter) and then roll in the breadcrumb mix and layout on a baking pan. Repeat this for each strip and add to the oven at 180⁰ for 25 mins, turn and cook for a further 10-15 until crispy.

To make sauce ~ make just before the tofu comes out of the oven, I melted 17g of flora butter and mix 3 tbsp of peri peri and poured over the crispy tofu.

I served with 1/2 a pack of Mediterranean couscous, roasted peppers, onions, 25g avocado, 70g 0% greek yogurt mixed with periperi sauce

My whole meal was

10 minute Katsu Curry and Cauliflower Egg Fried Rice

Easy meal 424 kcals ~ 29g Protein ~ 15g Fat ~ 47g Carbs

1 x crispy fillet
1 pack of katsu curry
70g egg whites
1 medium egg
50g frozen peas
1 pack of frozen green isle cauliflower rice

Cook Quorn Fillet as per instructions.
Mix egg white and egg, fry in a pan with a little sauce sauce and some garlic, add cauliflower rice and peas.
Heat sauce in microwave or on pan plate up and serve

If you've been following me for any length of time you will know I have a sweet tooth - breakfast, lunch, dinner I will happily eat sweet treats.
This dark chocolate baked oats recipe really hit the spot

Blend:
30g porridge oats
1/2 tsp baking powder
10g dark chocolate powder
10g protein powder
1 tbsp black forest syrup
125ml water (or milk)

Pour into baking tray - I added some raspberries and then into the oven for 20 mins on 180⁰

Topped with forest fruits, 1 square of dark chocolate raspberry 😋

❤Valentines Meal Inspo❤

Last night we indulged in a delicious 3 course Valentines Meal from Mayfly Restaurant restaurant in the Carlton Hotel by Dublin Airport perfect if you are vegetarian / vegan and have a carnivore in your life 🤣

When I collected it, it was beautifully boxed, all dishes labelled and included easy to follow instructions and timing for the dishes.

It made for a very relaxed, enjoyable date night.
The Vegan options were inventive, full of flavour and quite filling....and the meat options got a big thumbs up from my partner 👍

100% recommend the May Fly home kits if your are looking for something a little more luxurious than your regular takeaway.

30g cake mix
50g of Applesauce
100g egg whites
100g 0% protein yogurt
1 tsp baking powder
10g bournville Cocoa powder
1tsp Vanilla Extract
1 tbsp sweetener

Mix and divide into 6 portions, cook in over on 180⁰ for 15 mins, cook and leave to cool

Glaze was made by melting 5g of coconut oil and white dream / milk chocolate spread and crumbling 1 over the donuts

Quick Quorn Coconut Curry and Basmati Rice

Easy meal 535 kcals ~ 16g Protein ~ 22g Fat ~ 63g Carbs

1 x crispy fillet
20g sauce powder
75ml light coconut milk
125g of basmati rice

Cook Quorn Fillet as per instructions
Simmer coconut milk over a medium heat, add the curry powder and continue to stir until it starts thickening.

Side of stir-fry veg
