Les 6 saveurs de l’Ayurvéda… sans manger indien pour les débutants
Si vous ne connaissez pas votre constitution ayurvédique (Prakriti),
ni vos déséquilibres actuels (Vikriti), ou si vous n’avez tout simplement pas le temps de cuisiner « selon les Dosha » pour mille raisons du quotidien, il existe une porte d’entrée simple, universelle et très juste en Ayurvéda :

Intégrer les six saveurs (sad rasa) de l’Ayurvéda ne veut pas dire manger indien, ni cuisiner épicé ou adopter une culture alimentaire étrangère à la vôtre.

Il est expliqué clairement dans l'Ayurvéda que les saveurs sont des principes physiologiques universels (certaines vont nourrir, d'autres vont nettoyer), présents dans tous les aliments, partout dans le monde, indépendamment des traditions culinaires.

Une cuisine italienne, française, méditerranéenne ou japonaise peut naturellement contenir le doux, le salé, l’acide, l’amer, le piquant et l’astringent, dès lors que les ingrédients sont variés, bien choisis et correctement associés.

L’objectif de l’Ayurvéda n’est pas de reproduire une cuisine indienne, mais de respecter l’équilibre digestif, tissulaire et métabolique du corps, en stimulant votre feu digestif, en évitant l’excès d’une seule saveur, et en favorisant une assimilation complète du repas.

Les six saveurs sont décrites dans les textes comme un outil de régulation du corps.

Voici par exemple un plat contenant ces 6 saveurs

Polenta & ragoût italien de lentilles blondes, olives et citron

Ingrédients (2–3 personnes)
Polenta
100 g de polenta fine
500 ml d’eau
1 belle càs de ghee
Sel
Ragoût de lentilles
120 g de lentilles blondes, trempées toute la nuit
1 carotte finement coupée
1 branche de céleri
200 g de tomates concassées (bien cuites)
1 càc de ghee
1 feuille de laurier
½ càc origan
½ càc basilic sec
1 pincée romarin
1 pincée de poivre noir
1 pincée d'asafoetida
6–8 olives noires coupées
1 càc zeste de citron + quelques gouttes de jus
1 càs huile d’olive douce
Sel
Préparation
Ragoût
Faites cuire les lentilles dans de l’eau avec le laurier (30–40 min)
Égouttez
Faites revenir dans 1càc de ghee les herbes et épices
Ajoutez carotte, céleri, tomates et olives
Laissez mijoter doucement 15–20 min
Salez, ajoutez l’huile d’olive
Hors du feu : zeste + quelques gouttes de citron
Polenta
Portez l’eau salée à ébullition
Versez la polenta en pluie, remuez
Cuisez doucement jusqu’à texture crémeuse
Incorporez le ghee
Les 6 saveurs
Doux : polenta, carotte, lentilles...
Salé : sel + olives...
Acide : tomate + citron...
Amer : origan, basilic, laurier...
Piquant : romarin, poivre, laurier...
Astringent : lentilles, olive...
