My Indian expat client couldn't find a mayonnaise she actually liked.

For those asking, here's how we made it:
Non-Veg Mayo
⢠1 whole egg
⢠1 cup oil
⢠1 tbsp lemon juice or 1 tsp vinegar
⢠Salt to taste and your favourite spices
Blend and slowly add the oil until thick and creamy.
Veg Mayo
⢠½ cup milk
⢠1 cup oil
⢠1 tbsp lemon juice or vinegar
⢠Salt to taste and your favourite spices
Blend the milk first, then slowly add the oil while blending until it thickens. Please note that oil needs to be monitored or else it will sludge.
Both versions take less than 5 minutes.
And both taste better than many store-bought options.
