Cooking using Cold Pressed Virgin Coconut Oil
Vegetable Khichdi Recipe- Heat the MOODFARMS VIRGIN COCONUT oil in a pressure cooker on medium heat. Once hot add mustard seeds, let them pop. Then add cumin seeds and let them sizzle.Now add dried red chilies and saute for few seconds.
Add chopped onion and crush ginger, garlic, chili and Mix and saute till onions get soft and translucent or light pink in color.
Now add your vegetables, salt, turmeric powder, red chili powder, coriander powder, cumin powder and garam masala.
Mix and saute for a minute.Add washed dal, rice mixture.Cover the cooker with lid, put the weight on. Cook for 3 whistles on medium heat.
Tomato Thokku - Grind the tomatoes and tamarind to a paste.Heat MOODFARMS VIRGIN COCONUT oil (Indian sesame oil) in a pan and add in the mustard seeds and dried red chillies when the oil is hot. Let the mustard seeds crackle. Add in the asafoetida.
Now add the paste and chilly powder and little jaggery . Let the mixture boil for 15-20 mins in low flame. Keep sauteing the mixture to avoid scorching in the bottom.
The thokku will thicken up once ready.
