Our extraction method is based on cold pressed on the same day of the collection: the temperature during the extraction is of fundamental importance for the effect on the quality of olive oil. With high temperatures most of the volatile aromas vanishes and the rate of oxidation of the oil increases, thus producing an oil less qualitative. In addition, at higher temperatures it reduces the content of polyphenols, antioxidants and vitamins present in the oil. Concretely, the temperature is adjusted by controlling the temperature of the water added during these two steps. High temperatures are used to increase the production of olive oil obtained from the paste. Thanks to this procedure N & B is able to ensure an olive oil quality and very rich in nutrients.
