Tonight, it’s curry night for a curry connoisseur. Chicken curry marinated in yogurt, salt and turmeric overnight. One entire chicken weighing about 1.7kg feeds 6-7 people, one teaspoon salt. This is a recipe that has been repeated many times over. The recipe is somewhere in . so tonight it’s long beans, carrots and cabbage all in pot.

The chicken rice yesterday fed 6 people and 4 TNR dogs. So tonight, we roasted another chicken. This time, classic meat and three vege.

Lemon rosemary butter chicken. I used one teaspoon of salt for the whole chicken. So if the chicken feeds 5-6 people, each person would have only consumed about 1 g of added salt.

Rosemary was harvested from the in front of the house. This herb can grow here. It requires sunlight, but not direct sun.

We had a bit of leftover nasi himpit. So decided to have a cold lunch. This house is as far as possible.

We had fried whole fish from a lab practical where everyone declined to eat part of the fish. So we deboned it, pressed and rubbed against two fingers to ensure there were no stray fish bones.

We had some Japanese style seaweed lying in the house. Toasted some sesame seeds.

And a quick lunch is ready. . The fish bones and head will be soup stock for another meal.

For the second day of Eid, we made soto ayam and nasi himpit with toasted spices, no sauteeing in oil, and no rice cooked in plastic bags. Nasi himpit dihimpit dengan cobek batu untuk 4 - 5 jam, baru dipotong jadi kiub. (Rice is compacted with a heavy stone mortar for 4 - 5 hours before being cut into cubes).

One whole chicken, feeds about 6 people. The chicken is about 1.6 kg. Total additional salt intake for each person about 2 - 3 g, factoring in the sambal kicap.

We added hot soup to shredded cabbage to ensure no meal is without vegetables.

Made pitta bread and hummus, and boiled eggs on Sunday evening so that on Monday evening, I could just pour out extra virgin olive oil, take out zaatar, soak eggs in boiling water for 5 minutes, cut cucumber and carrot into sticks and wash cherry tomatoes for dinner. The whole operation took 5 minutes on Monday for a balanced dinner.

A most satisfying rise on the hot pan. Making pita bread. This one is the yeast and yogurt recipe because I have the time to prove the bread and allow for the dough to rise a second time.

Let’s vote. Should I eat it with:
1. Hummous, or
2. Zaatar and olive oil?

Both will be accompanied by cucumber and carrot sticks.
