Here are three simple and nutritious recipes that can be prepared in under 30 minutes:
# # # 1. **Quinoa Salad with Chickpeas and Avocado**
**Ingredients:**
- 1 cup quinoa
- 1 can (15 oz) chickpeas, rinsed and drained
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish (optional)
**Instructions:**
1. Rinse the quinoa under cold water. In a medium pot, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Fluff with a fork and let cool.
2. In a large bowl, combine the chickpeas, avocado, cherry tomatoes, cucumber, and red onion.
3. Add the cooled quinoa to the bowl. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to combine.
4. Garnish with fresh herbs if desired and serve.
# # # 2. **Stir-Fried Tofu and Vegetables**
**Ingredients:**
- 1 block (14 oz) firm tofu, drained and cubed
- 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil (or olive oil)
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Cooked rice or quinoa for serving
- Sesame seeds for garnish (optional)
**Instructions:**
1. Heat sesame oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
2. In the same skillet, add garlic and ginger, sautΓ© for about 30 seconds until fragrant.
3. Add mixed vegetables and stir-fry for about 5-7 minutes until tender-crisp.
4. Return the tofu to the skillet, add soy sauce, and stir to combine. Cook for an additional 2 minutes.
5. Serve over cooked rice or quinoa and sprinkle with sesame seeds if desired.
