RECIPE FOR EDITAN SOUP
Ingredients
Editan leaf
Waterleaf
Palm oil
Meat
Fish
Stockfish
Crayfish
Ponmo
Pepper
Seasoning cube
Salt
Water
Step 1
Slice your Editan leaf very thinly like afang, cross-cut until the leaves are very tiny, boil in a pot for about 7 minutes and then wash till it has no bitter taste(you can skip this process by buying already washed Editan from the market)
Step 2
Clean, wash and steam your protein of choice (you can use some or all the proteins listed depending on your preference)
Step 3
While your protein is steaming, slice your waterleaf.
Step 4
When you protein is ready, make sure the stock left in the pot before turning your oil into the pot. Allow to cook for about a minute or 2 before putting your waterleaf.
Step 5
Allow your waterleaf to cook for someone minutes before putting the washed Editan, crayfish and fresh pepper then add a little more oil
Step 6
Stir everything and allow to simmer for 2 minutes, taste and add seasoning cubes or salt if it is not enough and viola, your soup is ready
Note: putting oil before waterleaf helps the water in your soup to be thick
Putting pepper and crayfish last gives your soup more flavour
Avoid onions in any and every process of preparing this soup.
