As promised, heres the recipe for Beef & Lentil Stew.

This hearty stew is full of energy and high protein that will hit the spot when the weathers cold or after a workout.

500g Skirt Steak cut into small pieces
1 large onion diced
2 medium-sized carrots sliced
2 small orange kumara (sweet potatoes) cut into cubes
3/4 cup dried red lentils
1 can 400g of chopped tomatoes
1 tsp garlic powder
1 tsp dried thyme
2 cups beef stock
Salt & pepper to taste
3 cups of cooked brown rice and red quinoa

Saute the onion and brown the meat. Add all ingredients to a crock pot except the rice and quinoa. Set in low slow cook for approximately 5 to 6 hours.
Serve on top of cooked brown rice and quinoa.
Feeds 2 people dinner and then leftover lunches for the next day.

I'm pretty challenged by the word  'ENLARGE' currently.  It's challenging me to think of many ways that I can be enlarged but also help others to believe their lives can be enlarged too.  My church chooses a word each year to be the theme for the year, to challenge us and keep focused on the vision, thus year its ENLARGE.

As part of my focus this year to 'ENLARGE' Im stepping out of my comfort zone and trying new things, and also picking up things I've let slide a bit, especially those things that bring me joy.  We can only be the best for others when we are the best for ourselves first. So Im keen to share with you some more new things, big and small, and hopefully inspire you to try new things too!

If you're someone who struggles to try or do new things, then here's three things you can do right now to make your first step.

1.  Write a list of things you'd love to try or do. 
For example, maybe you'd like to make sourdough from scratch or maybe compete in a triathlon 🚴‍♀️🏃‍♀️🏊‍♀️ Write all your ideas down.

2.  Choose one thing from that list to either do or try over the next month or work towards, depending on what it is.  If you did this for a year, that's 12 new things you've tried! 🙌

3.  Tell someone! If you share with someone what you're thinking, you are more likely to do it.  So ⬇️ Comment below - ENLARGE and feel free to say what ever that thing is that you'd like to do or try. If you dont want to comment what it is, DM me or just type ENLARGE and tell a friend. 😊

Happy Love Day ❤
Traditionally this is the day where you and your significant other express your love for one and other through various kind gestures, maybe gifts or quality time together. But I also encourage you to love yourself today. You are valuable and you are worth it! Love your mind, body and spirit, all of you is incredible. And as the saying goes 'you can only truly love someone well if you first know how to love yourself'.
In order for me to be the best person I can be not only for me but also my husband, friends and family I need to value myself. Starting the day with a quiet time, prayer, reading, workout and then good food (paprika tofu, tomato, avo, hummus on gluten free toast for the win today) sets me up well for the day to be the best version of me.
Lots and lots of love to you today!!

HUMMUS RECIPE
1 can chickpeas (save the liquid for making aioli)
1/4 cup tahini
1 teaspoon garlic powder
1 good squeeze lemon
1/8 cup pickle(guerkin) juice/liquid from jar
3 tbsp olive oil
Salt & pepper

Add all ingredients together in a blender and blend together or bowl then blend together with a stick blender.

KFJ - KENTUCKY FRIED JACKFRUIT
Because I had a number of people ask So nicely here's the recipe 🤩 a bit of a treat and super easy to make you could use this recipe on cauliflower or broccoli or potatoes too or just whatever you feel in the mood for!

⭐ Ingredients
1 can jackfruit
1 cup gluten free flour
2 tsp smoked paprika
1 tsp dried oregano
1 tsp dried sage
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp Himalayan pink salt

⭐ Method
Drain can of jackfruit and with hands squeeze the liquid out of jackfruit
Add to a ziplock bag all the dry ingredients then shake up to mix together.
Place the jackfruit into the zip lock bag with other ingredients and shake altogether till the jackfruit are well covered.
Heat a generous amount of oil in pan for a shallow fry. Place the seasoned jackfruit into pan and fry turning while frying to make sure all sides are crispy and golden.
