Baba Ghanoush (Lebanon)
Ingredients:
• 2 medium eggplants
• 1/4 cup tahini paste
• 3 tablespoons fresh lemon juice
• 2 cloves garlic, minced
• 2 tablespoons extra virgin olive oil
• 1/2 teaspoon salt
• 1/4 teaspoon smoked paprika
• 2 tablespoons fresh parsley, chopped (for garnish)
• Pomegranate seeds for garnish (optional)
Preparation:
1. Preheat oven to 450°F (230°C) or prepare a grill. Prick eggplants with a fork and roast or grill until charred and soft, about 30-40 minutes.
2. Let eggplants cool, then peel off the skin and scoop out the flesh.
3. In a food processor, combine eggplant flesh, tahini, lemon juice, garlic, and salt. Process until smooth.
4. With the processor running, drizzle in olive oil until fully incorporated.
5. Transfer to a serving bowl, sprinkle with smoked paprika, and garnish with parsley and pomegranate seeds if using.
6. Refrigerate for at least 1 hour before serving. Will keep for up to 5 days.

1. Pita Bread - Classic dip for warm pita
2. Grilled Meats - Particularly lamb or beef kebabs

CHIMICHURRI SAUCE
Ingredients:
• 1 cup fresh flat-leaf parsley, finely chopped
• 1/4 cup fresh oregano leaves, finely chopped
• 3 cloves garlic, minced
• 1 shallot, finely chopped
• 1/2 cup extra virgin olive oil
• 2 tbsp red wine vinegar
• 1 tbsp fresh lemon juice
• 1/2 tsp red pepper flakes (adjust to taste)
• 1/2 tsp salt
Instructions:
1. Thoroughly wash and dry all herbs before chopping.
2. Combine chopped parsley, oregano, minced garlic, and shallot in a medium bowl.
3. Add red pepper flakes and salt, mixing well to distribute evenly.
4. Pour in olive oil, red wine vinegar, and lemon juice.
5. Stir until all ingredients are well combined.
6. Let stand at room temperature for at least 30 minutes before serving to allow flavors to develop.
7. For best flavor, prepare 1-2 hours ahead of time. Can be stored in the refrigerator for up to 3 days (bring to room temperature before serving).

Soft Butter Cake

**Ingredients**:

- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 4 large eggs, at room temperature
- 1 tsp vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup (60ml) milk, at room temperature

**Instructions**:

1. **Preheat Oven**: Preheat your oven to 350°F (175°C). Grease and line an 8-inch square baking pan or a similar-sized pan.

2. **Cream Butter and Sugar**: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.

3. **Add Eggs and Vanilla**: Beat in the eggs one at a time, ensuring each egg is well incorporated before adding the next. Stir in the vanilla extract.

4. **Combine Dry Ingredients**: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix just until combined (avoid overmixing).

5. **Bake**: Pour the batter into the prepared pan, spreading it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

6. **Cool and Serve**: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Serve as is, or with a dusting of powdered sugar or a dollop of whipped cream.
