• 1/4 cup fresh oregano leaves, finely chopped
• 3 cloves garlic, minced
• 1 shallot, finely chopped
• 1/2 cup extra virgin olive oil
• 2 tbsp red wine vinegar
• 1 tbsp fresh lemon juice
• 1/2 tsp red pepper flakes (adjust to taste)
• 1/2 tsp salt
Instructions:
1. Thoroughly wash and dry all herbs before chopping.
2. Combine chopped parsley, oregano, minced garlic, and shallot in a medium bowl.
3. Add red pepper flakes and salt, mixing well to distribute evenly.
4. Pour in olive oil, red wine vinegar, and lemon juice.
5. Stir until all ingredients are well combined.
6. Let stand at room temperature for at least 30 minutes before serving to allow flavors to develop.
7. For best flavor, prepare 1-2 hours ahead of time. Can be stored in the refrigerator for up to 3 days (bring to room temperature before serving).

3. Grilled Fish: Drizzle over white fish like sea bass or cod just before serving for a bright, herbaceous finish.
4. Chimichurri Chicken Sandwich: Spread on toasted ciabatta with grilled chicken breast, provolone cheese, and roasted red peppers.
