🥭🍰 Chef Liza’s Mango Cream Cake — soft, creamy, and made for mango lovers! Try recreating this at home, and for a more balanced sweetness, you can lessen the white chocolate in the ganache. Sweet tip from the kitchen! ✨

🍰 Ingredients:

Fresh Mango pieces around 3 medium sizes.

Plain Flour 200g
Baking powder 1 teaspoon
Sugar 100g
Butter 150g
3 large eggs
Vanilla extract 1 teaspoon
Coconut Milk 60ml

Mango puree (80g)

The Easy Ganache:
White Chocolate 150g
Coconut cream or
Thick Coconut milk 180ml
Mango puree 80g
Mango slices for decoration
Use two 8 inch springform pan

Method:

Add all the dry ingredients together and mix well
Add the Eggs, Butter, Vanilla and Coconut milk
Whisk at low speed for about 1 minute
Mix with a spoon/ spatula in between then add the mango puree.

Now Bake in a preheated Oven at 175c (350f) 30-35 minutes
Let it cool completely

Now make the ganache

Microwave White chocolate and the Coconut cream for about 1 minute
Mix well
Mix in the Mango puree
Refrigerate for about 30 minutes
Whisk for 1 minute
And it is ready!

Spread half the ganache in the middle
Spread the other half on the top.
Add mango sliced on top.
Enjoy!
