🇬🇧 Cooking doesn’t simply soften grains and beans.
It transforms their proteins, carbohydrates and fats.
🔥 Proteins denature and form enzyme-resistant bonds that prevent their complete breakdown into individual amino acids.
🔥 Starches and sugars are transformed. Under heat, sugars react with amino acids, creating new compounds—including acrylamide and other toxic, mutagenic and carcinogenic substances.
