I mentioned in the reel that I’d share the two recipes I meal-prepped, so here they are.

These aren’t the most exciting meals I make, but they’re two of my go-tos. I make them frequently because they’re easy, high-protein, contain plenty of fibre, and work really well for meal prep.

I very rarely cook for just one meal. If I’m cooking, I’ll usually make enough for 2-3 meals so I’ve got something ready to go in the fridge.

Also I’ve given vague measurements, but just do whatever you want really lol

Smoky Paprika Beef, Courgette & Peas

Makes around 2-3 portions

Ingredients:

• 500g lean beef mince
• medium courgettes, diced
• 2-3 garlic cloves, finely chopped
• 150g frozen peas
• 1 tbsp olive oil
• 1-2 tsp smoked paprika
• Salt and pepper
• Optional: cottage cheese

Method:

1. Heat the olive oil in a large frying pan and gently fry the garlic for around 30 seconds.
2. Add the diced courgette and cook for 5-7 minutes, until it starts to soften.
3. Add the beef mince and paprika, breaking the mince up as it cooks. Cook for around 7-8 minutes, until the beef is browned and cooked through.
4. Stir through the frozen peas for the final 3-4 minutes.
5. Season. I’ll sometimes add cottage cheese too if I have some in the fridge.

I normally eat this by itself, but you could easily serve it with rice, pasta or a baked potato if you want something more substantial.

Greek Yoghurt Tuna Mayo

Makes around 2-3 portions

Ingredients:

• 3 x 145g tins tuna, drained
• 150g Greek yoghurt
• 2 celery sticks, finely chopped
• 100g sweetcorn, drained
• some gherkins, finely chopped
• 1-2 tsp Dijon mustard
• Juice of ½ lemon
• Black pepper

Method:
Mix everything together in a bowl and keep it covered in the fridge until you’re ready to eat it.

Today I had mine on a big bed of salad, but it’s also great:

• spooned over a roasted sweet potato
• stuffed into a wholemeal pitta or wrap
• piled onto seeded toast or crackers

Two really easy meals I come back to again and again.
