This is actually based on a , there's a customer, Ms Ling, facing with severe osteoarthritis problem for many years. 😱

Ms Ling was active in morning jogs, and some hiking. However, the support of knee joint unable to sustain with the heavy amount of exercises every week. As day goes by, the synovial fluid between the gel has been totally wears off, and the inflammation starts to happen. 😢

𝐏𝐮𝐥𝐮𝐭 𝐈𝐧𝐭𝐢 𝐑𝐞𝐜𝐢𝐩𝐞
(steamed glutinous rice with gula melaka coconut toppings)

Pulut Inti is a dessert made of coconut milk steamed glutinous rice with sweet coconut topping. It is commonly wrapped with banana leaf with some coconut filling showing on the top. You may add some blue pea flower juice to part of the steamed rice to make it more attractive.

Ingredients for steamed glutinous rice: (Yields: 890 g)
-450 g glutinous rice (soak for at least 4 hours)
-135 g (1/2 cup + 1 tbsp) thick coconut milk
-125 g (1/2 cup + 1 tsp) plain water
-1 tsp fine salt
-3 pcs pandan leaves
-4 tsps thick bunga telang juice (blue pea flower juice)(optional)

Ingredients for gula Melaka coconut topping: (Yields: 280 g)
-110 g gula Melaka (coconut palm sugar)
-25 g dark brown sugar
-80 g hot water
-2 pcs pandan leaves
-160 g fresh shredded coconut
-slaked cornstarch (1 1/2 tsps cornstarch + 1 tbsp water)

For steamed glutinous rice:

1. Drain soaked glutinous rice. (Reminder: The soaking time for different types of glutinous rice might be different, adjust the soaking time according to the type of glutinous rice you use.)
2. Put pandan leaves in baking pan, add in drained glutinous rice, spread evenly with spatula. Add plain water and salt to thick coconut milk, mix well, then add to glutinous rice.
3. Steam glutinous rice over medium heat for 30 minutes. After steaming for 15 minutes, fluff the glutinous rice with chopsticks, then continue steaming for another 15 minutes.
4. After steaming for 30 minutes, discard pandan leaves. Add thick bunga telang juice to part of the rice, steam for another 5 minutes. (Reminder: Skip this step if omitting bunga telang juice.)
5. Set aside the steamed glutinous rice to cool (slightly cover to prevent it from drying).

For gula Melaka coconut topping:

1. Combine coconut palm sugar, dark brown sugar, hot water and pandan leaves in a saucepan, cook over medium heat until sugar fully dissolved.
2. Strain sugar syrup through a sieve into non-stick cooking pan, add in slaked cornstarch, mix well. Add in shredded coconut, mix until combined.
3. Cook over medium heat until the liquid has dried up. Set aside to cool.

Assembling Pulut Inti:

1. Prepare 15 pieces (size: 5 1/2″ x 7″) rectangle banana leaves. Blanch in hot boiling water until softened. Wash with dish washing net, then dry with kitchen towels.
2. Put about 59 g of steamed glutinous rice in the middle of banana leaf, top with 1 tbsp of coconut topping, then wrap with banana leaf.

Cholesterol is a type of lipid. It’s a waxy, fat-like substance that your liver produces naturally. It’s vital for the formation of cell membranes, certain hormones, and vitamin D.
Cholesterol doesn’t dissolve in water, so it can’t travel through your blood on its own. To help transport cholesterol, your liver produces lipoproteins.

Lipoproteins are particles made from fat and protein. They carry cholesterol and triglycerides (another type of lipid) through your bloodstream. The two major forms of lipoprotein are low-density lipoprotein (LDL) and high-density lipoprotein (HDL).
If your blood contains too much LDL cholesterol (cholesterol carried by low-density lipoprotein), it’s known as high cholesterol. When left untreated, high cholesterol can lead to many health problems, including heart attack or stroke.

[ 𝐅𝐑𝐈𝐄𝐃 𝐌𝐀𝐂𝐊𝐄𝐑𝐄𝐋 𝐒𝐓𝐔𝐅𝐅𝐄𝐃 𝐖𝐈𝐓𝐇 𝐒𝐀𝐌𝐁𝐀𝐋 𝐑𝐞𝐜𝐢𝐩𝐞 ]

INGREDIENTS:
-3 mackerel (ikan kembung)
-1/4 cup cooking oil for shallow frying
-3 fresh red chilies, briefly deseeded then cut to smaller pieces to aid blending
-5 dried red chilies, soaked to soften, halved and deseeded
-12 shallots, peeled
-3 cloves garlic, peeled and hard ends trimmed
-2 stalks lemongrass (about 4" of just the tender white parts), briefly chopped to ease blending
-1 tbsp sauteed shrimp paste (belacan)
-1 tsp salt
-1 tsp sugar
-1/2 tbsp tamarind paste
-1/4 cup water
-3 tbsps cooking oil

INSTRUCTIONS
1. Blend the fresh red chillies, dried red chillies, shallots, garlic and chopped lemongrass into a smooth paste. Set aside.

2. Add 1/4 cup of water to the tamarind paste. Squeeze to extract the tamarind juice, discarding the seeds/pulp after that.

3. Heat up the wok with about 3 tbsps of cooking oil over medium heat. Add in the blended ingredients, sauteed shrimp paste (belacan), salt and sugar and fry until aromatic and slightly browned (about 5 to 7 minutes).

4. Add in the tamarind juice next and continue to stir fry for another 10 minutes until the color darkens a little further and the mixture gets slightly drier. Dish out and set aside to let cool.

5. Working with a fish at a time, make two slits lengthwise along its back, one on each side. Make deep cuts close to the ribs to make two pockets good for stuffing.

6. Using a butter knife, stuff the sambal paste into each pocket generously. Level and smooth off the sambal at the brim. Let rest on a plate lined with paper towels, cover and let marinate for at least an hour in the fridge.

7. Heat up about 1/4 cup of cooking oil in the wok over high. The oil should at least cover the bottom half of the fish comfortably.

8. Make sure that the oil is well heated prior to frying. Turn the heat down to medium, and carefully slide in the fish side by side. Leave a little gap in between them if possible. Fry for about 10 minutes (or more until lightly charred) before flipping them over to fry the other side. Avoid flipping over too many times to prevent the sambal from getting displaced.

9. Remove from wok and let rest on a sieve (to allow excess oil to drip off).

Eat foods that give you lots of nutrients without a lot of extra calories, such as

·Fruits and vegetables (choose different types with bright colors)

·Whole grains, like oatmeal, whole-wheat bread, and brown rice

·Fat-free or low-fat milk and cheese, or soy or rice milk that has added vitamin D and calcium

·Seafood, lean meats, poultry, and eggs

·Beans, nuts, and seeds

·Avoid empty calories. These are foods with lots of calories but few nutrients, such as chips, candy, baked goods, soda, and alcohol.

·Pick foods that are low in cholesterol and fat. You especially want to try to avoid saturated and trans fats. Saturated fats are usually fats that come from animals. Trans fats are processed fats in stick margarine and vegetable shortening. You may find them in some store-bought baked goods and fried foods at some fast-food restaurants.

·Drink enough liquids, so you don't get dehydrated. Some people lose their sense of thirst as they age. And certain medicines might make it even more important to have plenty of fluids.

·Be physically active. If you have started losing your appetite, exercising may help you to feel hungrier.
