Today I want to share with you "Crispy pita pizza bites".

Total Time: 17 minutes

Nutrition Information (per serving):
Calories 190 kcal
Protein 9g
Carbohydrates 22g

Ingredients:
8 pita bread rounds
1 cup tomato-based pasta sauce
4 slices of shaved ham
1/2 punnet (125g) cherry tomatoes, halved
1 red capsicum, seeds removed, cut into strips
1 green capsicum, seeds removed, cut into strips
25g olives, pitted
1 small onion, thinly sliced
80g button mushrooms, sliced
1 1/2 cups (185g) low-fat grated mozzarella

Directions:

1) Preheat a grill to medium heat. Place half the pita on a baking tray lined with foil. Grill on one side for 1-2 minutes until crisp. Remove from heat.

2) Turn over the pita, grilled side down, on the tray and spread each with some pasta sauce. Add the pizza toppings above or a selection of your favourite toppings, sprinkling with the cheese last. Grill for 2-3 minutes or until the cheese has melted. Serve immediately. Repeat the process with the remaining pita bread.

Today I want to share with you "Classic Reuben sandwiches served with crispy fries".

Ingredients:
1/4 green cabbage, cored, finely shredded
1/4 red cabbage, cored, finely shredded
60ml (1/4 cup) thousand island dressing
500g frozen shoestring fries
8 slices rye bread
8 slices Swiss cheese
4 slices corned beef silverside
Gherkins, to serve

Directions:

1) Combine the cabbage and dressing in a large bowl. Season with salt and pepper.

2) Preheat the grill on medium-high. Spread the fries over a large baking tray and cook under the grill, turning occasionally, for 5-10 minutes or until crisp and light golden. Season with salt.

3) Toast the bread until golden. Place the toasts, in a single layer, on a large baking tray. Top with the cheese and cook under grill for 1 minute or until the cheese melts.

4) Divide the silverside among half the toasts. Top with the cabbage mixture and remaining toasts, cheese-side down.

5) Place the sandwiches and fries on serving plates. Serve with gherkins.

Notes:
Cook's tip: To make your own silverside, place a 1.5kg-piece of corned beef in a large stockpot and cover with boiling water. Add 2 tbs malt vinegar, 1 halved onion, 8 black peppercorns, 3 whole cloves and 2 dried bay leaves. Simmer, partially covered, for 1 1/2 hours or until tender. Cool and slice.

1 x 300g focaccia bread, halved, split
1 tbsp extra-virgin olive oil
1 garlic clove, crushed
60g baby rocket
1 tomato, thinly sliced
60g provolone cheese (see note), thinly sliced
70g sliced mortadella

Directions:

1) Lightly grill or toast both sides of focaccia. Combine oil and garlic. Brush over focaccia bases.

2) Top bases with rocket, tomato, provolone and mortadella. Season with salt and pepper. Sandwich with focaccia tops. Serve.

350g pkt fresh egg noodles
1 tbsp olive oil
400g pork loin medallions, thinly sliced across the grain
400g pkt Asian stir-fry vegetables
190g jar Thai chilli jam
1 cup whole fresh basil leaves

Directions:

1) Prepare noodles according to packet directions and set aside.

2) Heat oil in a large wok and stir-fry pork, in two batches, until lightly browned. Return all pork to wok with Asian stir-fry mix and continue to stir-fry for 1 min, or until vegetables are just tender. Add chilli jam and prepared noodles and stir-fry until heated through. Stir through basil and serve immediately.

Today I want to share with you "Savory satay-style beef wok fry".

Ingredients:
2 x 250g pkts basmati rice
2 tsp olive oil
400g beef stir-fry strips
2 x 400g pkts Asian Stir-Fry Vegetables
1 tbsp water
1 x 300g btl Asia at Home Thai Satay Sauce

Directions:

1) Heat rice following packet directions.

2) Meanwhile, heat half the oil in a wok over medium-high heat. Add half the beef and stir-fry for 2 minutes or until brown. Transfer to a bowl. Repeat with the remaining beef, reheating the wok between batches. 3. Heat the remaining oil in the wok over medium-high heat. Add the vegetables and stir-fry for 2 minutes. Add the water. Cover and cook for 1 minute. Add the beef and sauce, and stir-fry for 1 minute or until heated through.

3) Divide the rice among serving dishes and top with the beef mixture to serve.
