Today I want to share with you "Quick Keto Cinnamon Swirl Mug Cake".

Protein: 11 g

Ingredients:
For the cinnamon swirl:
2 tablespoons Swerve Brown Sugar Replacement
¼ teaspoon cinnamon
1 tablespoon water

For the cake:
3 tablespoons almond flour
1 tablespoon Thrive Market Organic Coconut Flour
½ teaspoon baking powder
½ teaspoon cinnamon
⅛ teaspoon nutmeg
1 tablespoon Swerve Brown Sugar Replacement
1 large egg
1 tablespoon milk of choice
1 tablespoon coconut oil

For the icing:
1 to 2 teaspoons Swerve Confectioners Sugar Replacement
1 tablespoon milk of choice

Directions:

1) Prepare the cinnamon filling:
Combine all the cinnamon swirl ingredients in a small bowl and mix until smooth and well blended.

2) Prepare the mug cake:
In a large microwave-safe mug, mix together the almond flour, coconut flour, baking powder, cinnamon, nutmeg, and brown sweetener. Add the egg, milk, and oil, then stir until a smooth batter forms. Spoon the cinnamon mixture over the batter and lightly swirl it through with a spoon, being careful not to overmix. Microwave on high power for about 1 minute and 15 seconds. Allow the cake to rest for 2 minutes before adding the topping.

3) Prepare the glaze:
In a small bowl, stir the sweetener and milk together until creamy and lump-free. Drizzle the glaze over the warm mug cake just before serving.

Ingredients:
Olive cooking spray

1 large salmon fillet (about 2 1/4 lb.)

3/4 tsp. kosher salt

1/4 tsp. freshly ground black pepper

1/4 cup mayonnaise

1 1/2 cups crumbled feta (about 7 oz.)

1/4 cup chopped fresh parsley

2 Tbsp. chopped fresh dill

1 tsp. finely grated lemon zest

1 clove garlic, finely chopped

Lemon wedges, for serving

Directions:

1) Heat the oven to 400°F. Cover a large baking tray with foil and lightly coat it with cooking spray.

2) Place the salmon fillets skin-side down on the prepared tray. Season the top with salt and black pepper, then evenly spread mayonnaise over the surface.

3) In a medium mixing bowl, gently combine the feta cheese, parsley, dill, lemon zest, and minced garlic, keeping the feta slightly chunky. Scatter the mixture over the salmon.

4) Roast until the salmon is tender and flakes easily with a fork, about 25 minutes. Serve hot with fresh lemon wedges on the side.

Today I want to share with you "Applewood Smoked Bacon & Egg Breakfast Pizza".

Ingredients:
1 prepared pizza dough or 12-inch pre-made crust
6–8 slices Applewood Smoked Bacon, cooked and crumbled
1 cup shredded mozzarella cheese
1/2 cup shredded Monterey Jack or provolone cheese
2–4 eggs
1 tablespoon olive oil
1 clove garlic, minced
2 green onions or chives, sliced
Salt and black pepper to taste
Optional: hash browns, spinach, Parmesan cheese, red pepper flakes

Directions:

1) Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.

2) Cook the bacon in a skillet until crisp. Drain on paper towels and crumble into pieces.

3) Roll or stretch the pizza dough into a 12-inch circle on a lightly floured surface.

4) Brush the dough lightly with olive oil and sprinkle with minced garlic.

5) Add the mozzarella and Monterey Jack (or provolone) cheeses evenly across the dough.

6) Sprinkle the crumbled bacon and green onions over the cheese. If using hash browns or spinach, add them now.

7) Create small open spaces in the toppings and crack the eggs directly onto the pizza.

8) Bake for 10–15 minutes, or until the crust is golden, the cheese is bubbling, and the egg whites are set while yolks remain slightly runny.

9) Remove from the oven and season with salt, black pepper, Parmesan, or red pepper flakes if desired.

10) Slice and serve hot.

Today I want to share with you "Creamy Curried Egg Mayo & Green Shallot Sandwiches".

Ingredients:
3 Omega-3 eggs
1 tbsp medium curry paste
2 tsp olive oil
80g (1/4 cup) fat-free mayonnaise
3 green shallots, trimmed, finely chopped
Salt & freshly ground black pepper
8 slices sourdough bread
40g baby spinach leaves, stems trimmed, washed, dried

Directions:

1) Place the eggs in a small saucepan of cold water. Bring to the boil over high heat. Reduce heat to medium and gently boil, uncovered, stirring occasionally, for 7 minutes. Drain and cool under running water. Set aside to cool for 10 minutes.

2) Meanwhile, place the curry paste and oil in a small saucepan over medium heat. Cook, stirring, for 30 seconds or until bubbling and fragrant (see microwave tip). Set aside to cool.

3) Peel the eggs and place in a medium bowl. Use a fork to roughly mash. Add the curry-paste mixture, mayonnaise and green shallots. Taste and season with salt and pepper.

4) Top 4 slices of bread with the spinach leaves. Evenly spread egg mixture over the spinach and top with remaining slices of bread.
