Not to throw shade at shelf stable elderberry syrups - I bought a shelf stable brand when I first started buying it 10+ years ago. Shelf stable is nice but you enjoy ALL of the potential health benefits and taste all of the yummy ingredients when it's FRESHLY made.
Making something shelf stable is essentially canning the syrup. The process of canning results in the loss of water soluble vitamins - like Vitamin C. Elderberry is loaded with Vitamin C, which is a critical component of these special little berries. 🫐
There's a reason you shop for raw honey, right? Did you know heating honey destroys its beneficial properties? Prolonged heating kills natural enzymes, nutrients and probiotics present in the honey and also potentially affects the glycemic index (which is important if you are diabetic).
