Join me Saturday 10/8 Orchard (8pm) for my monthly Crystal Bowl Sound Bath! It’s almost a full moon and we’re gonna get hella vibey and release some of those energetic blockages you’ve built up over the past month. Think of it as monthly self care and energy maintenance!

White bean and broccolini salad with tarragon-dill vinaigrette is the ‘it’ dish to bring to your next summer potluck. I don’t make the rules, I just…well, I did make that rule, actually. One of my favorite ways to prepare veggies is roasting. First of all, it’s 𝕖𝕒𝕤𝕪 as heck. Peel, chop, toss in olive oil and a little salt, and…forget about it in the oven for 20-40 minutes! But even more, they are so 𝕥𝕒𝕤𝕥𝕪. The natural sugars in the veggies become caramelized, everything gets a little brown and toasty, and the flavors just become so extra (in the best way). Here I’ve roasted parsnip, beets, and broccoli. But I also roasted some mini sweet peppers and garlic to throw in that lovely tapenade! I’ve gotten big on, instead of a sauce that coats everything, having one element that is just 𝕡𝕒𝕔𝕜𝕖𝕕 with flavor. This tapenade is packed with those peppers and garlic, plus almonds, green and black olives, capers, red pepper flakes, and oregano. Such a treat! Everything is rounded out with wild rice pilaf (still on that ish) and some sausages I had kicking in the back of my fridge. Wholesome, filling, delicious. What more could you want??

That lasagna from my stories the other night! I’m terrible at lasagna photos, so here are two mediocre ones instead of one good one (swipe for layer shot). For this autumnal bad boy, we’ve got:
🍂 Roasted butternut squash and garlic cream sauce (notes of nutmeg, sage, and coriander)
🍂 Mushroom, tempeh, and kale veggie filling
🍂 Basil, parsley, and chive pesto
🍂 Tofu ricotta

One of my favorite super quick meals, even quicker than - yes - pasta. Thai curry! When I need a boatload of veggies, this is one of the best ways to get them fast. Chop a bunch of them (make sure they have similar cooking times) and put in a large, shallow pan. Add a sprinkle of salt and a big dollop of curry paste (I use yellow the most), plus enough water to cover the bottom of the pan. Mix, cover, and cook on med-high until just barely done (for this combo; that was about 5 minutes). Then turn down the heat and add a can of coconut milk plus any preseasoned protein you’re using. These are curry nuggets from and they went really well! If you’re using raw tofu or tempeh, cook it alongside the veggies. Anyway, after you add the coconut milk, stir gently and heat through - just another couple of minutes. Serve with rice! To see a walkthrough of this, it’s in my stories for the next 24 hours.

I just practiced Yoga Nidra for the first time in ages, and wow wow wow y’all. I forgot how powerfully calming this practice is for me. I’m the kind of person (like many of us are) who knows what I need to do in order to self-soothe in a healthy way, but rarely do those things when I need them most. I wonder a lot about why we deny ourselves comfort when it can be right at our fingertips, within reach. Here’s to doing the things we know we need to do: practice, drink a glass of water, take ten deep breaths, step into nature, eat a snack, take the magnesium (or the meds that work for you), meditate, move, stretch, turn off the tv, go to sleep. We may not always choose to do them (and that’s ok!), but take notice of how good you feel after you do. Try to do more things that make you feel good, when you are able to. Turn towards peace, when it’s available to you.
