Mature vs. Microgreen Broccoli

Broccoli microgreens might just be the MVP of the microgreen world when it comes to nutritional benefits — they’re tiny, but mighty! 🌱💥 Here's what makes them so special:

Vitamins & Micronutrients
• Vitamin C: Microgreens often contain equal or higher amounts per 100 g compared with mature broccoli.
• Vitamin A: Some microgreens (depending on variety/measurement) show significantly higher vitamin A content versus mature broccoli.
• Vitamin K: Roughly similar per 100 g.

Minerals
• Iron & Magnesium: Broccoli microgreens can contain higher iron and magnesium compared with mature broccoli.
• Potassium: Mature broccoli generally has more. G
• Calcium: Similar between both forms.
Calories, Protein & Fiber
• Calories: Nearly the same per 100 g.
• Protein: Mature broccoli slightly higher, but the difference is small.
• Fiber: Mature broccoli typically has a bit more since microgreens are young and tender.
________________________________________
📌 Summary (per 100 g raw)
• Mature broccoli provides strong fiber, potassium, and a well-balanced vitamin profile.
• Broccoli microgreens are nutrient-dense hotspots, especially for iron, magnesium, vitamin A, and (in some reports) vitamin C, plus phytonutrients

Ozark Mighty Greens will be at the Rogers Local Food and Art Market May 16, 2026 from 8a-1p.
