Honey cough syrup
Simmer 2 cups of distilled water with ½ oz dried thyme leaves or 1 oz fresh herb, simmer until reduced by half.
Thinly slice an organic lemon (skin and seeds) and place in a wide mouth pint jar with a plastic lid.
Once reduced strain the leaves and pour the liquid over the lemon.
Fill the jar with raw honey and shake vigorously to mix.
Label and date
This can be used immediately but will be more potent in a few days when the lemons become soft.
Store in the refrigerator for up to 3 months or freeze up to 1 year.
Take a teaspoon as needed to calm a cough.
