Tw: sharing my experience of loss

Today is national rainbow baby day...

A year ago I went to get my first ultrasound at 10 weeks pregnant, only to find out that we had experienced a loss without knowing it, 3 weeks prior.
As I sat there in the exam room, waiting for a heartbeat that never was heard.

It was my worst fears come true. Even though I never met that little one, I loved that baby and already made so many plans in expectations of meeting him. Boris and I were devastated.

About a month later, we found out we were pregnant again, and with a little boy once again.

This time, my heart felt guarded. Was this real or would it end up in a loss again? The worst emotional pain I have ever felt. The pain never really gets easier, you just get more used to living with it.

The weeks went by and check ups came and went, each time I hesitated, wondering, will there be a heart beat? And each time, there was.... as the weeks passed, I started easing into the idea that we were in fact having another child and he seemed strong and healthy but that anxiety was always there in the background.

And now, we have our beautiful baby boy in our arms. With all our hearts, we love him and I guess you could say he is our rainbow baby.

If you know someone who is experiencing a loss, please hold them, offer them food or compassion in whatever way they need. And if you, (hopefully never) experience loss, please know you can reach out to me for anything.

So happy to have our son as he is truely a sunshine rainbow after a dark storm. We are so grateful.

Holiday Cheese Platter! πŸ§€πŸŽ„ This is a great one for hosting a crowd. Made using raw cashews and nutritional yeast for a creamy soft nut-cheese that everyone can get on board with. Making your own nut-cheese is actually pretty simple. I've included the recipe belowπŸ‘‡. Enjoy it to the fullest. By .ca

Vegan Nut Cheese:
2 cups (300g) raw cashews, soaked overnight
3 cloves garlic, minced
1 lemon, juiced
2 tbsp (30 ml) apple cider vinegar
3 tbsp nutritional yeast
1 tbsp psyllium husk (optional, to help with binding)
1/2 tsp garlic powder
1/2 tsp onion powder
black poppyseed (optional for sprinkling)
1. Drain soaked cashews and add to food processor along with minced garlic, lemon juice, apple cider vinegar, nutritional yeast, psyllium husk, garlic powder and onion powder. Blend until smooth and creamy.
2. Place a fine mesh strainer (or colander) over a large mixing bowl, and lay down two layers of cheesecloth (or a clean, fine, absorbent towel). Scoop cashew mix onto cheesecloth, then gather the corners and twist the top gently to form the cheese into a "disc." Secure with a rubber band.
3. Place cheese in refrigerator to set for at least 6 hours, preferably 12 hours or overnight, until there's no more excess moisture, and it holds its form when released from the cheesecloth. (I left mine in the fridge overnight)
4. To serve, unwrap from cheesecloth and gently invert onto a serving platter. Reform with hands as needed, then sprinkle with poppyseed to coat. (Handle gently as the cheese is soft). Enjoy with fresh cut vegetables, fruits, and crackers.
