Successful 2nd half progression!! First 6 miles were easy at ~9:20, then progressed the next 6 at 8:44, 8:37, 8:18, 8:12, 8:16, 7:51 πŸ™‚β€β†•οΈπŸŒž only a few more weeks to go!!!

DAIRY FREE CHICKEN SALAD MEAL PREP!
Have actually been down bad with a stomach bug for the last day & a half and this is one of the last things I looked at so I unfortunately can’t bring myself to eat it now this week but nonetheless wanted to share the recipe bc it’s delish!!

3 chicken breasts
5 stalks celery
1/2 onion
1 cup dairy free yogurt or reg yogurt (I used protein yogurt)
1/3 cup Dijon mustard
Onion & garlic powder, chili flakes, salt & pepper to taste
Finely dice celery & onion, and mix w yogurt, mustard, and spices. Cook & shred chicken - once cooled add to the mixture. Split it into 5 containers and add any sides you want - cucumber, bell pepper, crackers or rice cakes, fruit, etc. Sooo simple & good!!

EASY MEAL PREP -
2 lbs chicken breast
3-4 sweet potatoes
2 cucumbers
2 bell peppers
1 bag baby carrots
Hot sauce
Slice sweet potatoes in half and bake open side down at 400, for about 40 mins. Cook chicken with 1/2 cup of hot sauce, I use an or a crock pot would be great too! Once cooked, shred and mix in garlic powder, onion powder, salt, and more hot sauce to taste. Slice cucumber, peppers, and carrots and split everything into 5 containers. Hummus, avocado, or a yogurt dip would be great to add morning of too!!

LUNCH MEAL PREP -
3-4 sweet potatoes
~2 lbs chicken breast
3 heads of romaine lettuce
2 cucumber
2-3 tomatoes
1/4 yellow or red onion
1/2 jar pitted kalamata olives
Dressing - equal parts olive oil, red wine vinegar, salt, pepper, garlic & oregano.
Slice sweet potato in half and roast open side down at 400 for 40 mins. Cook & shred chicken with your favorite seasoning, this week I used oregano, garlic & onion, salt & pepper. Chop lettuce, cucumbers, tomatoes, onion, & olives and evenly split everything in 5 containers. Add as much dressing as you like day of!
